Truffle Fry Grilled Cheese with Havarti

Let’s talk books today – I need some new stuff.  I’ve  had several different books going for some time but I need something new and exciting.  The last really good ones I read were The Fault in Our Stars and Gone Girl and what can beat those two?

I am definitely on pins and needles waiting for both movies.  I’m not even a movie person but pins and needles!

I have to read something to prevent myself from having another Netflix marathon after finishing all six seasons of Private Practice.  I “accidentally” found myself starting season 1, episode 1 of (what else?) Grey’s Anatomy this week and I’m willing myself not to get hooked.  So, I need a new book to get hooked on.

Or more grilled cheese, obviously.

Like this one with truffle fries.  Yes, truffle fries.  I know I talk way too often about what I miss about KC.  The truth is that I don’t miss it all that much.  But the truffle fries at Blanc (which I’ve talked about before) – I certainly do miss those.  Salty and savory and the perfect accompaniment to a gourmet burger and a cold IPA.

So I finally made some truffle fries at home but I accidentally stuck them between two slices of bread with some creamy havarti cheese and I thought I had died and gone to heaven.

By the way, if you are a crazed grilled cheese fan as I am, you can follow along with the goodness on my Pinterest board dedicated to grilled cheese sandwiches.  I definitely need a life.

Truffle Fry Grilled Cheese

Yield: 4 sandwiches

Total Time: 45 min

A fun grilled cheese recipe with creamy havarti cheese and super-savory truffle fries!

Ingredients:

1 bag (15-ounce) frozen french fries
3-4 tsp. truffle oil
1 tsp. kosher salt
1/2 tsp. black pepper
6 ounces havarti cheese, shredded
8 slices crusty bread

Directions:

Preheat the oven as directed on the fry package and spread the fries in an even layer on a rimmed baking pan. Bake as directed, stirring occasionally, making sure to let the fries crisp up a bit.

Remove them from the oven, add two teaspoons of truffle oil, the salt and pepper and mix to distribute. Add more truffle oil to taste. I used a full 4 teaspoons, but you might want less because it is strong.

Heat a large griddle or non-stick skillet over medium heat. Butter one side of each sandwich and place four of the slices in the pan, butter side down. Top with a little cheese, a generous helping of the fries, a little more cheese, and then top each with the other slice of bread, butter side up.

Allow the sandwich to toast and the cheese to melt, about 5 minutes, and then gently flip and cook for another 4 minutes or so, until the bread is toasty and brown and the cheese is melted.

It's ok if some of the fries fall out!
