Toffee Chocolate Chip Blondies

As it goes in the odd world of food blogging, I’m staring at these Toffee Chocolate Chip Blondies on my screen this morning while they have actually been long devoured.  I made them several weeks ago and of course, am just now getting the chance to post them.  And I am simultaneously wishing I had made a second ceremonial batch to enjoy while writing this post.

There is something about the cooler fall weather and a cup of morning coffee that makes me totally crave chocolate chips.  And more, dipping those chocolate chips, whether they be studded in cookies, brownies or blondies, into my piping hot cup of coffee.  My Grammy taught me do eat cookies that way when I was way, way too young to be drinking coffee.  But that was her style.  And my heart and soul are forever grateful.  My jeans, not so much.  But my heart – yes, ever-so-grateful.

And so as I am typing these words and sipping coffee, I am really, really wishing I had another (or two) of these Toffee Chocolate Chip Blondies to dunk and devour.  Sometimes dessert for breakfast is all you need!

But I wasn’t so forward thinking this weekend so I’ll have to get by with just starting at my screen.  I love a good chewy cookie and I think that’s why I like blondies so much. Lots of brown sugar gives a nice crispy top while the center stays nice and chewy.  There is a little secret to these though – there is NO butter in them.  My friends at STAR helped me out with this one with Butter Flavored Olive Oil.  This oil has definitely become a staple in our pantry over the last few months.  My favorite use for it is on popcorn but it’s a great alternative for baking, too!  All of the flavor of using butter, with all of the benefits of using olive oil.  Win-win!  And STAR is sponsoring a recipe contest this month to challenge you to #Switch2STAR!  (Butter Flavored Olive Oil can be found at Wal-Mart Stores.

STAR Fine Foods Butter Flavored Olive Oil

Toffee Chocolate Chip Blondies

Yield: 16 Blondies

Total Time: 30 min

Soft & chewy Toffee Chocolate Chips Blondies made with STAR Fine Foods Butter Flavored Olive Oil. All the flavor of butter, without all the saturated fat.


1/4 cup + 2 Tablespoons STAR Fine Foods Butter Flavored Olive Oil
1 cup light brown sugar, packed
1 large egg
2 tsp. vanilla extract
1/4 tsp. kosher salt
1 cup all-purpose flour
1/3 cup chocolate chips (1 Tablespoon reserved)
1/3 cup toffee chips (1 Tablespoon reserved)


Preheat the oven to 350 degrees. Grease a square 8x8 baking dish.

In a medium bowl, mix together the Butter Flavored Olive Oil and the brown sugar with a wooden spoon until mixed well. Add the egg and vanilla and mix to combine. Stir in the salt and flour and mix until all of the dry ingredients are incorporated. Mix in the chocolate chips and toffee chips (reserving 1 Tablespoon of each.)

Spread the dough into the prepared baking dish and spread evenly with a spatula. Sprinkle the remaining chocolate chips and toffee chips evenly over the top. Bake in a 350 degree oven for 22-25 minutes, until the top is golden brown. Cool completely before cutting into 16 squares.

    Oh wow – these look awesome! Toffee is so under-used in my kitchen, which is such a shame! I would happily dunk these in my coffee all day long! lol

    Love your blog! We made these and they were dripping in oil. I think there might be something off re. the ratio of oil to flour. Perhaps less oil or more flour is needed. It definitely has potential as a recipe.
