Stuffed Chicken Breasts with Goat Cheese, Sun-Dried Tomatoes and Prosciutto

Admittedly, I have not always been a big meat eater. After college, I decided to become a vegetarian but after about 6 months it was obvious that I wasn’t providing my body with enough protein. And I had signed up for a half marathon and started to crave grilled chicken on a regular basis.
Fast forward five years to the present and I find myself again in the middle of half marathon training and find my body screaming for protein. So much so that I’ve had chicken for breakfast a couple of days. So weird, I know, but that’s what I’m craving.
While I still love my meatless meals, we have been eating a lot more chicken lately. And I’m pumped to introduce you to Just BARE Chicken® today! I remember Paul and I were on a big health kick, we had gone on a run one evening, and I had been reading Natalie’s blog series on Staying Whole in a Processed World. How cool is that?

And you guys know how I feel about sun-dried tomatoes lately! The only change I made was instead of using oil-packed sun-dried tomatoes, I used the dry ones my brother-in-law brought me from Sicily. I truly had a hard time deciding which recipe to make from the cookbook. This recipe is full of flavor while still healthy. The goat cheese and sun-dried tomatoes totally won me over and the method is so fun. And how could you beat prosciutto-wrapped chicken?!

I had never heard of Bare and now I’m dying to check it out! I’m huge on sustainably raised meat, so this is very exciting for me! I adore stuffed chicken and haven’t made it forever, so I’m anxious to try your recipe..all the stuffing goodies sound marvelous!

I was veg for 3 years, and broke my meat fast on a Chili Cheese Burger from Tommy’s! Now, because of growing up on a farm, it’s really important for me to support humane farms (even more important than organic). On the west coast we have Foster Farms fresh chicken (they only do frozen to the rest of the US), but I love that Just Bare reaches more people.

Like Jackie, I use Foster Farms fresh chicken I’ve never heard of Just Bare. I hope my grocery store starts carrying it soon! And anything stuffed with goat cheese = amazing in my book.
This chicken sounds so good – my husband would love the goat cheese part of it! We have made big strides in the last year or so as well, but I know I can always do more!
I was a fish-etarian for about 12 years. Eventually bacon (really any pig) was my weakness and I came back over to the dark side. But vegetarian remain some of my favorites today. This dish had me at prosciutto and goat cheese (another weakness of mine!)

I’m a firm believer that we should listen to ourselves when it comes to what to eat, Cassie – gotta eat what you need to do a half-marathon!!! And this looks like a particularly delicious way to get that protein.

It’s funny, I don’t seem to ever really crave protein while training…just salt. Lots and lots of salt. 🙂 Sounds like a great option for chicken though!

Oh heck yes! Cassie, this is perfection. I make chicken all the time. At least 4 nights a week. That’s a ton of chicken and I am always looking for new ways to prepare it. I love the goat cheese inside! And sun dried tomatoes. My other love 🙂
