Stove-Top Smoky Chicken & Artichoke Dip from Bake Your Day

Well, we should maybe talk about where I’ve been lately.  I haven’t been slacking.  Kind of the opposite, actually.  Let me just say that never in my life have I had an understanding of the word “busy” like I have understood it in the past three months.

Let me also say that I love having that understanding.  I have taken a much-needed break from social media not necessarily by choice but by necessity.  I have had to reassess how I spend my time at home.  I haven’t been able to spend near as much time in the kitchen as I would like to.  Through it, though, I feel like I have gained an enormous amount of perspective on life – my priorities in regards to the blog and life.

I’m still figuring it all out – how to share recipes and stories here because I love to do it, while also balancing work and home and life.  But I want to say thank you to YOU.  Your emails and tweets and messages over the last months have meant the world.  I have definitely missed being here and I am really looking forward to getting back to some kind of posting regularity!

Stove-Top Smoky Chicken & Artichoke Dip from Bake Your Day

Let’s talk about this smoky chicken & artichoke dip – it’s one of those spontaneous ideas I had and knew immediately I needed to make it.  Paul loves smoky flavor in anything and I have really become a fan of artichoke dip.  And for a simple twist, I made it in a pan on the stove.  Super simple and so flavorful!

Stove-Top Smoky Chicken & Artichoke Dip

Yield: 4 cups

Total Time: 20 min

Smoked paprika, three cheeses, chicken, garlic and artichoke hearts...all done on the stove-top!

Ingredients:

2 tsp. olive oil
1/4 cup yellow onion, diced
1 clove garlic, minced
1 1/2 cups chicken, shredded
12 ounces chopped artichoke hearts
1 tsp. smoked paprika
8 ounces room temperature cream cheese, cut into small cubes.
1/2 cup sour cream
1 cup shredded mozzarella cheese
1/2 cup Parmesan cheese
Salt & pepper to taste

Directions:

Heat the oil in a medium skillet over medium-high heat. Add the onion and garlic and cook for about 6 minutes, until fragrant and translucent. Stir in the chicken, chopped artichoke hearts, and smoked paprika and stir until warmed.

Add the cubed cream cheese and stir well until melted. Stir in the sour cream, mozzarella cheese and Parmesan cheese and cook, stirring almost constantly, until melted and heated through. Season with salt and pepper to taste.

Serve with veggies, crackers or tortilla chips.

Cassie's Notes:
I used light sour cream and 1/3-less fat cream cheese in this recipe because it's what I had on hand but you could use full fat for either of those ingredients if you prefer.
