Slow Cooker Verde Chicken Tostadas

I completely failed at something this summer. Well, probably more than one “something”, but I at least failed at one: using my slow cooker. You would think that slow cooker meals would be top of mind with higher temperatures and less time to spend in the kitchen but the only time I pulled mine out was for buffalo chicken dip. That is, until last week. It is still technically summer, right? On a whim, I added verde salsa to my Spicy Mexican Chicken Pasta a couple of weeks ago and since then we just can’t get enough. So I’ve been using it constantly lately. It adds such an amazing flavor to any dish. I’m not sure what took me so long to start using it as an ingredient in cooking. I had only imagined how wonderful the flavors would be if they sat in a slow cooker all day long.
This brings me back to my neglected slow cooker which I ended up dusting off last week after its summer hiatus. The summer heat was definitely still around so I decided a no-fuss, slow-cooker verde chicken dinner was necessary. I had the second half of my Family Pack of Just BARE Boneless Skinless Chicken Breast Fillets, along with a regular package of Just BARE Boneless Skinless Chicken Thighs and I couldn’t help but pour in some verde salsa, along with lots of cilantro, onions, garlic and jalapenos and let it cook all day. And then instead of traditional taco shells, I thought tostadas would be fun, piled high with fresh avocado, more cilantro and more verde salsa. They were fun to eat and super simple to make. There is just something about walking out the door in the morning knowing that the evening’s dinner is already done! Slow Cooker Verde Chicken Tostadas
Yield: 8 servings
Prep Time: 10 min
Total Time: 8.5 min hours (includes slow cooker time)
Slow Cooker Verde Chicken Tostadas - moist and flavorful slow-cooked chicken set atop tostada shells and topped with cilantro and fresh avocado.
Ingredients:
for the verde chicken:
1 (16-ounce) package Just BARE Chicken Boneless Chicken Thighs
14 ounces (about 1/2 family pack) Just BARE Chicken Boneless Skinless Chicken Breasts
1/4 tsp. salt
1/4 tsp. black pepper
1/4 cup yellow onion, diced
2 green onions, chopped
1/2 cup chopped fresh cilantro
2 cloves garlic, minced
1 jalapeno pepper, veins and seeds removed
16 ounce jar salsa verde
2 cups chicken brothfor the tostadas:
1 package of tostada shells (or 1 package of soft corn tortillas, cooked according to package directions)
1 avocado, cubed
1/3 cup fresh cilantro, chopped
2 green onions, chopped
Additional verde salsaDirections:
Line the crock of a 6-quart or larger slow cooker. Sprinkle the top with salt and pepper. Spread the onions, green onions, cilantro, garlic and jalapeno pepper evenly over the top of the chicken. In a small bowl, mix the salsa verde and chicken broth. Pour over the chicken and vegetables in the slow cooker.
Place the lid on the slow cooker and cook the chicken on low for 8 hours or on high for 4 hours. The internal temperature of the chicken should reach 165 degrees.
Remove the cooked chicken from the slow cooker and transfer to a large bowl. Shred the chicken with two forks and ladle in about 1 1/2 cups of the juice from the slow cooker. Cover and keep warm. Discard the rest of the juice.
Serve the chicken on top of the tostada shells. Top with avocado, fresh cilantro, green onions and more salsa verde.

I don’t know why I don’t use my slow cooker in the summer, you’re right it would be easier especially with the heat. But for some reason slow cookers always seem like a winter thing to me. But this dish, this is perfect because I will have broken out the slow cooker for fall but it will taste just like summer! 🙂
I always use my slow cooker that it looks old and rugged. It always help me save time and be more efficient in the kitchen. Specially when you have kids and is also working.
