Mexican Quinoa Salad with Creamy Avocado Dressing
You know what I love? I love sunshine. I love it when the sun shines into the evening. I love getting home from work and taking a walk or jog in our neighborhood. I love it that, after that walk or jog, that I can make dinner and still have some daylight to take pictures of it.
Paul doesn’t love that he has to wait to eat his dinner. But this kind of meal is worth the wait. It’s one that won’t ruin your workout. It’s one that is so quick to throw together. It is creamy without any mayonnaise or sour cream added. It’s full of Mexican flavors, which we all know are my favorite. And it can be served warm or chilled, which makes it a perfect choice for summer cookouts.

I’ve made a similar mexican quinoa salad with a different kind of dressing, which I absolutely loved, but I most definitely have to try this avocado dressing! It looks incredible and oh-so-creamy. It’ll really help the quinoa soak up all the flavors.
I make a big batch of quinoa black bean salad every week for my lunches…. you just took it up a notch with that avocado dressing!! YUMMM

Sounds awesome! I wish I have some energy left before dinner to workout! I like the part that dinner doesn’t ruin your exercise… It’s so disappointing that you lose calorie and gain it back or extra more after you eat meals. Looks yum! Going to check out Claire’s site!

I love the longer days and the abundance of sunshine as well, spring and summer are my favorite seasons in part for that very reason!

This reminds me of the Whole Foods Southwestern Quinoa salad (but they use red quinoa) and I am super excited to have the recipe! It will be much cheaper : )
High protein quinoa is getting popular more and more everyday. Recently I learned it is also GF, so a lot of my friends are hooked into quinoa. This would really be a great addition to my quinoa recipes. Thanks for sharing.

I’m torn…I love sunshine and longer days, but with them come the heat (for just a little longer!) It’s almost too warm to walk with the dog before the sun is setting, and he’s crazy in the house until then! I am ready for Ohio, and to share recipes like this one with family 🙂 Quinoa and avocado are absolute staples in my house these days…love this!
You sold me with the quinoa salad, but adding avocado dressing just made it more irresistible!!! YUM.

Oh yum, I’m still learning to enjoy quinoa, but Mexican flavors will definitely go a long way toward making that happen 🙂

Made it last night for dinner. Relish. I omitted the olive oil and used the liquid from my black beans instead. Soooo yummy. I will be making this again soon. Thanks for the great recipe.
