Mango-Peach Salsa

There’s no doubt that I have thoroughly enjoyed all of thefruits and veggies of this summer. Several weeknight dinners for me have included simple roasted veggiesand I’ve possibly eaten my weight in peaches! And although I’m sad to see thefreshness of summer come to an end, I’m really looking forward to fall and allits bounty.

I only made one salsathis summer so when my Door to Door Organics box showed up last week includingfresh cilantro, tomatoes, peaches and mango, it spoke pretty clearly that itwas my chance to finish out the summer with a fruity salsa!  I know, the box didn’t really “speak” to mebut you know what I’m saying.  I had nevermade fresh fruit salsa before but I decided to throw together some flavors tosee how it turned out.  I really lovedit. I will definitely add a jalapeno next time but it was perfect to enjoy myfresh fruits and veggies!

We ate it with tortilla chips but I think it would beexcellent served with grilled fish or pork too!

Mango Peach Salsa Recipe


1 yellow peach, diced
1 mango, diced (Ali gives a great tutorial here)
1 tomato, diced
1/4 cup onion, diced
1 clove garlic, minced
1 Tbs. fresh cilantro, chopped
1/2 tsp. cumin
1/2 tsp. cayenne pepper
1/4 tsp. salt
Combine all ingredients and mix well. Refrigerate for atleast 30 minutes; the longer the better. Serve with chips, veggies or grilled chicken or fish.

    For sure delicious on pork! Oh mi goodness 🙂 I love mango salsas. The jalapeno would add a really cool layer of flavor. Here I'll use scotch bonnet instead cause it works really well with mango. That being said…my mangoes have trouble getting turned into anything because I'm too impatient and just eat the darn thing plain!

    Wonderful, Cassie! I make peach salsa and I make mango salsas, so next I'm going to combine the two like you did here! I love salsas like this because you can eat it with chips, or serve it on top of fish or chicken!

    The peaches have been so good this year, I'm sad to see them come to an end too, although I am ready for fall baking! This salsa looks so good and combines 2 of my favorite fruits- yum!!!

    oh my goodness I had a mango peach salsa on a Shrimp and Scallops at Bonefish Grill once and it was absolutely to die for!!! I will have to try yours and whip up some shrimp to try and make it feel like summer again!!!

    I have never actually purchased a mango. I like it when I have it in stuff, but the whole giant pit in the middle scares me! Salsa looks great!

    Cassie…this is beautiful! Such vibrant colors! I imagine this would be a great accompaniment to grilled fish or pork. But no meat or tortilla chips needed for me. Just give me a spoon! What a bowl of gorgeous yum! : )

    I love fruit salsas. My mom makes a mango pineapple one; next time I definitely have to ask her to try it with peaches.
