Happy Fat Tuesday, friends!

I don’t have anything indulgent to share today, per se.  But Paul and I are heading off to New Orleans this week!!  We have never been there and we are heading south (thank you, Louisiana for being warmer than Missouri!) to experience the sights and – of course – the F.O.O.D. New Orleans has to offer.

You might know this, but we got some more snow and ice over the weekend.  So while I did not step foot outside on Sunday, I did spend the day in the kitchen playing around with some Louisiana flavors by mixing up a homemade Cajun seasoning!  (Ahem, I also spent the ENTIRE day watching Private Practice on Netflix on my iPad while in the kitchen.  Why did they cancel that show!!  Talk about obsessed!)

So where do we need to go in NOLA?  Cafe Du Monde, Pat O’Briens, Acme Oyster Bar, we have all the basics but tell me the hidden treasures.  What should we see?  We are staying smack dab in the middle of the French Quarter in Bourbon Street.  I have been working extra hard at the gym the last few weeks so that I can eat as many beignets, hush puppies and fried oysters & shrimp as my heart desires.

I will post about our trip (hopefully) next week when I have brought myself out of a fried food and hurricane coma.  And then I’ll share with you what I made with this Cajun seasoning mix!

Homemade Cajun Seasoning Mix

Yield: About 1 cup

Total Time: 5 min

Homemade seasoning mix for make-at-home Cajun food. So flavorful and perfectly spicy!

Ingredients:

1 Tbs. + 2 tsp. paprika
1 Tbs. garlic powder
1 Tbs. onion powder
3 tsp. kosher salt
3 tsp. black pepper
3 tsp. dried oregano
3 tsp. dried thyme
2 tsp. cayenne pepper
1 tsp. crushed red pepper flakes

Directions:

Mix all ingredients together and store in an airtight container for up to one month.
