Creamy Tomato Soup with Tortellini
Today. The high is 77. Yesterday. The afternoon was beautiful and sunny and a perfect 70 degrees. So why on earth am I posting a tomato soup recipe?
Well, the answer is simple – I love soup. And also, I actually made this a couple weeks ago when it was blizzard-y and cold. The truth is, I love soup all year ’round. Lots of soups. Except I can’t say that tomato soup was ever at the top of my list of favorites.
That was the truth, at least, until that soup swap that I told you about. One of the soups that I came home with was a creamy tomato soup with tortellini and sun-dried tomatoes and it was seriously the best tomato soup I’ve ever had. Paul said the same.
So I soon set out to recreate the recipe and you won’t believe how simple this is. I am usually one to prefer to make these recipes from scratch. But this tomato soup before your eyes is made from a couple of “doctored up” cans of tomato soup – not the condensed kind – but the bigger cans of tomato-basil soup.
A few extra herbs and garlic, some sun-dried tomatoes, a package of tortellini, and you have yourself the simplest, most flavorful and quick tomato soup!

Creamy Tomato Soup with Tortellini
Yield: 2 servings
Total Time: 20 min
A simple, quick and flavorful creamy tomato soup recipe with sun-dried tomatoes and cheese tortellini. Perfect for anytime of day!
Ingredients:
1 tsp. olive oil
2 cloves garlic, minced
2 tsp. dried basil
2 (19-ounce) cans tomato basil soup (any brand)
1 (8-ounce) package four cheese tortellini, cooked 3 minutes less than directed on the package
1 cup sun-dried tomatoes, chopped
1/2 cup milk
Parmesan cheese, for serving, optionalDirections:
Heat the olive oil in a large Dutch oven or stock pot. Add the garlic and stir constantly until fragrant and soft, about 4 minutes. Add the dried basil and stir. Pour in the soup, tortellini, and sun-dried tomatoes. Bring to a simmer and cook for about 10 minutes. Stir in the milk. Serve with Parmesan cheese.

Happy Friday Cassie! It was so nice here over last weekend and then DROPPED to 30 degrees and windy. The wind almost took me out yesterday. I’m not a fan! all I want when I get home from work is a big bowl of creamy warm soup like this 🙂

Oooh, the mean about March is that you know this warm weather is only a tease. There will be plenty of time to enjoy a nice, hearty soup like this before winter has truly given up. I love that this is so easy.
