Chunky Veggie Marinara and Door to Door Organics!

I’m so excited to announce that I am partnering with Door to Door Organics!  I find such importance in filling my body with good-for-me stuff and fruits and veggies are where it’s at.  I got my first box yesterday and I’m so excited to get cooking.

Here’s how it works: you visit and you choose your location.  They aren’t in every state yet but adding more as we speak.  You register and sign up for a weekly or bi-weekly delivery.  You set your preferences, start and stop as needed and you can even hold a box when you’ll be out of town.  Each Friday you receive and email with the contents of your box for the following week.  You can substitute and make changes as you wish…I did this with a few of my items.  All of their produce is 100% certified USDA Organic, delivered free (in most locations) and they utilize small, local farms and vendors (as much as possible) for the freshest-possible produce.

It was pretty easy to plan meals from the email that I received and I’m so excited to share what I create from it.  I made this chunky veggie marinara a while back with some farmer’s market produce and I plan on making it again this weekend with my box from Door to Door.

Chunky Veggie Marinara with Whole-Wheat Gnocchi Recipe
1 red pepper, diced
1 small onion, diced
1 cloves garlic, minced
1 cup grape tomatoes, halved
2 cups fresh squash/zucchini, cut into half-moons
2 tsp. dried oregano
1 tsp. dried basil
1 tsp. dried thyme
1 tsp. crushed red pepper flakes
2 cups fresh baby spinach leaves
1 (15 ounce) can tomato sauce
1 tsp. sugar
1 package whole-wheat gnocchi
Heat 2 teaspoons olive oil in a large non-stick skillet over medium heat.  Add onion, garlic and red pepper and sauté until fragrant and the onions begin to caramelize.  Stir in the dried herbs and red pepper flakes and the grape tomatoes.
Add tomato sauce and stir well.  Bring to a simmer and then reduce heat and season with salt and pepper to taste.  Allow the sauce to thicken slightly.
Cook gnocchi according to package directions.  After you add the gnocchi to boiling water, add the spinach leaves to the tomato sauce and stir.  Allow the spinach leaves to wilt as they mix in with the sauce.
Drain the gnocchi and stir into the sauce.  Serve with parmesan cheese.

    Your dish looks so good, Cassie! I love gnocchi! If I got to pick a box to get, I would pick the Office fun box! It has kiwis and oranges (some of my faves)!

    Hey there. There isn't a Door to Door so don't bother with me. Just know that I think your marinara sauce looks fantastic. I'm sure that paired with the gnocchi it was delicious.

    We used to get Door to Door when we lived in St Joe and it was invaluable because there wasn't nearly as much organic produce available as their is in KC! We really liked it.

    I really like this kind of service. Good stuff and they even deliver it to you! How come California is not listed yet… duhhhh! Organic produces are everywhere and it's competitive, hopefully this company will be succussful so they will come to my nearest place. Shopping will be a lot easier. 😉

    What a fantastic service. I'd probably go with the small veggie box, because we go through a lot of veggies in this house. And it has an artichoke in it, yummy! Your sauce looks great too.

    Hi Cassie! I don't live in a state with Door-to-Door…but I LOVE it! I hope they service Florida soon….the closest CSA for me is about 30 miles one way…so it's not feasible to participate right now.

    I love reading your blog and actually just used a Groupon to try Door to Door. I got the bitty box mixed because I live alone and didn't want to waste anything. I would say some of my favorite fruits and veggies would be tomatoes, asparagus, watermelon, cherries, onions…and the list could go on and on.

    i just got done watching Food Inc earlier this evening and it made me want to buy only local produce…so it was such a coincidence I saw this tonight! I am so excited for apples right now but I absolutely love all fruits and veggies!!!

    I don't know of this company, but I love it already! My husband and I are consciously trying to eat more organic produce and more vegetables in general, so I'd definitely want a box full of veggies 🙂
