Butter-Flavored Olive Oil Chocolate Chip Cookies

So, Paul and I went camping this weekend. Not glamping as they say these days, but real pitch-a-tent, build-a-fire, no-shower-for-2-days camping. We relaxed, unplugged, cooked together, canoed, and relished in the crazy weather that is gracing us this August. I can’t believe we had to be concerned with being cold in the middle of August in Missouri!
The whole time we were camping, though, I kept thinking about chocolate chip cookies. I didn’t bake any to bring with us and I just really wanted one…maybe it’s because fall seems to be right around the corner, maybe it’s because my sweet tooth is just out of control, or maybe it was because I was looking forward to this post today. All I know is, I’m made a second batch of these cookies when we got home on Saturday!
So about these cookies…when my good friends at STAR asked me if I wanted to develop a recipe for their top-secret new product, I jumped on board immediately. I didn’t know what the product was (at that time) nor did I care because never have I been disappointed in a STAR product. My shelves stay stocked with their oils, vinegars and artichokes. So when I received the next email telling me that the product was butter-flavored olive oil, my jaw literally dropped.
And then when the package came in the mail, the smell of butter was evident before I even opened the bottle. I thought of many different ideas for recipes but when it came down to it, a recipe for classic chocolate chip cookies seemed the most appropriate for celebrating butter and butter-flavored baked goods!
STAR has put together a conversion chart for recipes that call for butter, for you to be able to sub the butter-flavored olive oil. And best of all, the Butter-Flavored Olive Oil is available in stores today! The butter flavor was definitely evident in these cookies, they were soft and fluffy and I promise you, you won’t miss the real butter. Oh, and this oil might also be my new favorite popcorn topping, too!

Butter-Flavored Olive Oil Chocolate Chip Cookies
Yield: 3 dozen
Prep Time: 10 min
Total Time: 30 min
Classic chocolate chip cookies with a healthier twist - butter flavored olive oil! All the classic butter flavor with less fat than the classic favorite.
Ingredients:
2 cups flour
3/4 tsp baking soda
1 tsp. cornstarch
3/4 tsp. salt
1/2 cup + 1 Tbs. STAR Fine Foods Butter-Flavored Olive Oil
1 cup light brown sugar
1/2 cup granulated sugar
1 Tbs. vanilla
1 egg + 1 egg yolk
1.5 cups chocolate chipsDirections:
Preheat the oven to 325 degrees. Line two large baking sheets with parchment paper or silicone liners.
Combine the flour, baking soda, cornstarch and salt in a medium bowl. Stir and set aside.
In the bowl of a stand mixer, combine the butter-flavored olive oil, brown sugar, and granulated sugar and mix on low speed until thoroughly combined. Add the egg and mix until incorporated, then add the yolk mixing until combined. Add the vanilla and mix on medium speed until the eggs and vanilla are fully incorporated.
On low speed, slowly add the dry ingredients mixing just until no white streaks remain. Add the chocolate chips and mix until distributed throughout. Scoop the dough onto the prepared cookie sheets into 1-inch balls.
Bake in the pre-heated oven for 8-10 minutes until the edges are just golden brown.

Where has this been all my life?! I need to try this stuff! I love baking cakes with oil b/c it keeps them softer but sometimes I do miss the butter flavor. This is the best of both worlds. And great idea to use it in cookies!
Pitch tent camping with your sweetie sounds fun!! That’s an experience I’ll probably never share with my hubby lol, we are not camping people…I did it once or twice back in the day, but with experienced people, I have no clue.

Glad you and hubs had a relaxing weekend in the woods. I love camping and there’s nothing like being in the wilderness where cell recipetion is spotty at best and there’s not a computer in sight. Butter flavored olive oil – that is a genius idea! These cookies look wonderful. I’ve been meaning to try olive oil cookies, this might just be the excuse I need.
We went camping a few weeks ago, for the first time actually, and ate likes kings! I prepped everything before we left and loaded up the ice chests. It was somewhat ridiculous, but worth it. What can I say, I’m a camping newbie. I did not, however, bring any cookies or baked goods. Camping fail. Love these and this olive oil!

FYI y’all, sad news for anyone who was interested in looking for the product: the Butter-Flavored Olive Oil was discontinued a while back 🙁
Using STAR’s conversion chart (http://starfinefoods.com/health-nutrition/conversion-chart/), it looks like this recipe would convert from [1/2 C + 1 T] of oil to [2/3 C + 1 T + 1 t] or [3/4 C – 2 t] of butter. 🙂
