White Chocolate Confetti Cookie Pie

Last week was sparkly.  From the fireworks, I mean.  We need fireworks shows more often, in my opinion.

Hopefully we can recreate them a little with sprinkles.  Yes?  How about if they are red, white and blue sprinkles?  Now we are talkin’.  Kansas City has been literally buzzing as we were hosts of this year’s MLB All-Star game, which happened yesterday.  There have been concerts, fan fests, crowds of people, lots of food, lots of beer, lots of baseball and lots of heat.

Literally, it was 106 degrees on Saturday and I turned on my oven to make a sparkly confetti cookie pie in honor of Kansas City and of Major League Baseball.  But let’s face it, I don’t really care for baseball at all.  I really made a sparkly confetti cookie pie just because it was Saturday and I wanted a cookie.

And I also made it for Laurie because she moved in this crazy heat.  And new homes usually call for a pie.  So I took some amazing cookie dough and baked it into pie form.  Oh yeah, and I sneaked in some sprinkles and white chocolate chips.  Take that, crazy high temperatures.

    I love the red, white and blue sprinkles. It’s a classy, subtle way to add holiday cheer to the cookie pie without the food coloring. And it really looks tasty! Cookie pies were always my favorite growing up.

    Wow, Cassie this looks SO amazing!! I’m totally with you on the fireworks too – we just lit some of our sparklers off last night because I was already missing fireworks :)

    Ooh! Ooh! I love white chocolate. I almost made this as soon as I got home from work to send to my husband, who is working in another city for two months, but I chickened out. It looks so gooey and it’s really, really humid over here and I didn’t want it to reach him moldy. But yum… white chocolate cookie pie. Oh! There needs to be a butterscotch cookie pie. This would be fantastic. Or butterscotch + white chocolate. :)

    Hi Cassie. This pie looks so delicious!! I copied down the recipe, but hadn’t had a chance to try it out yet. After Thanksgiving I had a bit of cranberry sauce left and wanted to think of something to do with it. I thought of your cookie pie….and made a White Chocolate and Cranberry Swirl version and posted it on my blog.
