The Ultimate Breakfast Sandwich
Oh, hi. Remember me? I used to make food and photograph it and post it here. And then October came and then I just took a little break from doing such things. When life gets busy, you just ride the wave, right? Take it all in, one day at a time. Just live life. That’s what I’ve been doing.
I actually hate using the word “busy” because I think our society has an inflated view of what busy really means. So we will just say that my hands have not been idle lately. I’ve been driving through the gorgeous fall-colored hills of Missouri. My job in picks up this time of year with open enrollment meetings. Paul did a solo hike in the Ozark Mountains; we have soaked up some quality time with friends and family, cooked dinner together in our newly face-lifted kitchen and while I have missed blogging, the break was much needed.
Sometimes you just need a breather to get things going again and I’m pretty excited to be back today because we are celebrating a special lady in the blogging world. You probably know Jessica of How Sweet Eats, and you probably know that she is expecting her first little one in a couple of weeks and to celebrate, tons of her blogging pals have banded together today to throw a shower devoted to outrageous food. I love Jessica’s recipes as much as the next person. But even more I love her creativity, her enthusiasm, her passion and her drive, and the way she conveys things online.
So to celebrate, I made a sandwich, of course. The Ultimate Breakfast Sandwich, to be exact. It has shredded Gruyere cheese, Canadian bacon, a Parmesan-fried egg and honey-sriracha mayo. And I could eat this one for breakfast lunch or dinner!

The Ultimate Breakfast Sandwich with Honey-Sriracha Mayo
Yield: 2 sandwiches
Total Time: 20 min
The Ultimate Breakfast Sandwich featuring Canadian bacon, Parmesan-fried eggs, shredded Gruyere cheese and honey-Sriracha mayo! Ultimate breakfast flavor with ultimate ease.
Ingredients:
for the honey-sriracha mayo:
1/4 cup mayo
2 tsp. honey
1 tsp. Sriracha sauce
Pinch of salt
4 slices crusty bread
4 slices Canadian bacon
1/4 cup shredded Gruyere Cheese
2 eggs
2 Tbs. shredded Parmesan cheese
Salt & Pepper to tasteDirections:
Mix together the mayo, honey, sriracha sauce and salt in a small bowl.
Toast the bread as desired and slather a the mayo onto two slices of the bread. Place the Canadian bacon on top of the mayo, and add half of the cheese to another two slices of bread.
Fry the eggs over medium heat, adding salt and pepper to taste. When the whites have begun to harden, divide the Parmesan cheese evenly among both eggs. Place the eggs over these cheese on two of the slices of bread, then top with the Canadian bacon/mayo slices, and serve.
The best part about this recipe? I have everything in my house to make this – and I think I’m about to do just that.
