Sweet Potato Black Bean Burgers

Do you observe “Meatless Monday”?  For as many meatless meals I have around here, I don’t think we have discussed this very important day of the week!  Not that we observe it every week.  I mean, is it even a real thing?  Anyway, for various reasons, we choose to eat meat/poultry only a couple of times per week.

Now, let me tell you – Paul and I were both born and raised in the Midwest so I don’t that that either of us could completely give up red meat.  Let’s just establish that right now.  However, we do feel passionately about buying high quality meat when we do consume it and that just means that we consume it less often.

But let me assure you that we do not sacrifice flavor or variety with our meatless meals.  You might know I have a thing with black bean burgers.  I have probably never made one the exact same twice.  I guess the more variety, the better.   Our friends and family love these and they really can be made with any combination of veggies and flavors.

But it wasn’t until recently that had planned to make black bean burgers and then realized that I had some sweet potatoes that really needed to be eaten.  So I threw some sweet potatoes in with the flavors of our favorite black bean burgers.  I left the quinoa out of this one, added a little sugar and man, do these take their place at the top of the list of favorite meals.  An instant winner in our house!

These burgers are super simple and the flavors are very adaptable.  We like them spicy but if you are feeding them to kids, I would recommend reducing the hot sauce a bit.  Also, these freeze and re-heat beautifully.  Just freeze them on waxed paper on a cookie sheet, then remove from the freezer, wrap in plastic wrap and then in foil.  Thaw in the fridge when you are ready to cook them.  The burgers will also last, uncooked, for about four days in an airtight container in the fridge.

    We have a very similar philosophy! We don’t always eat meatless on Monday but we do eat meatless several days a week. We try to only buy organic chicken/grassfed beef so instead of taking out a second mortgage, we just eat less meat. 🙂

    We don’t focus on Mondays specifically but we do try to go easy on the meat. These burgers look like a perfect substitute!

    We’ve been trying to implement meatless mondays, and I was just looking around for a new veggie or black bean burger! I LOVE that there is sweet potato in these, my recent obsession! CAn’t wait to try these!

    We don’t do as many meatless meals as I’d like to, my husband is a meat and potatoes guy through and through! We’re working on it though… I’ve been brainstorming healthier burger ideas for summer, love the combo of black beans and sweet potatoes here!

    I gave up all meat for several years, but, well…bacon and chicken wings drew me back in! Ha. Vegetarian food still remains some of my favorite though. I would love these burgers!

    Black beans + sweet potatoes are one of my fave flavor combos! We put them together for quesadillas all the time, but have never tried them in a burger. Great idea! Also, we have a similar meat philosophy around here (that I don’t want to wash the cutting board that frequently…)

    Oh yes, Cassie – I went rogue and turned into a vegetarian in college. Then I realized that I could never possibly give up red meat entirely. Thank goodness – it only takes one whiff of those midwestern ribs to make me glad I changed my mind. But, like you guys, most nights of the week we don’t eat any meat at all. Veggie burgers are an easy sell even for my meat-loving husband. These look fantastic!

    I do love my black bean burgers and I especially love them paired with sweet potatoes. Usually I eat them as fries but I love the idea of mashing sweet potato into the burger mix!

    Even though I just ate lunch, I’m officially starving again. These burgers look AWESOME, Cassie! I actually prefer veggie burgers to meat burgers because I love the different textures and flavors from the combo veggies. Sweet potatoes are my fave, too, so this burger is like, meant for me.

    We have exactly the same attitude towards eating meat – the more vegetarian meals we have during the week, the better I feel about our diet. These look so tasty & delicious and I defy anyone to notice the lack of meat!
