Spicy Peanut Noodle Stir-Fry

I’ve sort of had an Asian theme going on lately.  I love the sweet-salty-savory flavors of this stir fry and love meals full of veggies!

Let me tell you about the exciting life that we lead.  Paul worked last Saturday.  For this job he had to be up at 3am which meant that he was holding his eyelids open at 6pm.

I had grocery shopped, exercised, baked, and cleaned all day so I was definitely ready to kick my feet up and watch National Treasure.  Don’t act like you don’t love that movie too.

Spicy stir fry ends up working well in these situations.  It’s quick, for one.  Second, it’s fairly healthy.  Third, it tastes amazing.  That’s no exaggeration.

I always have these ingredients on hand;  I love the sweet-salty-savory flavors and love meals full of veggies!  This Trader Joe’s discovery increases the ease of this meal.  I’m head over heels in love with this chicken.  Try them, you’ll see what I mean.

Spicy Peanut Noodle Stir-Fry

Spicy Peanut Noodles with Stir-Fry Recipe

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Creamy spicy peanutty sauce with a quick chicken, veggie and pasta stir-fry.


for the sauce:
1/4 cup soy sauce
2 Tbs. creamy peanut butter
1 Tbs. honey
1 tsp. sesame oil
1 tsp. sesame seeds
1 tsp. ginger, freshly grated (or 1/2 tsp. ground ginger)
1/2 tsp. rice wine vinegar
1/2 tsp. Sriracha sauce
1/2 tsp. crushed red pepper
1/2 tsp. ground black pepper
1 clove garlic, minced

for the stir fry:
1 tsp. olive oil
1 clove garlic, minced
2 cups broccoli florets
1 cup mushrooms, stems removed, quartered
1/4 cup green onions, chopped
2 cups cooked chicken
1/2 cup unsalted peanuts
6 ounces whole-wheat pasta (I used thin spaghetti noodles)


Cook pasta according to package directions. In a small bowl, whisk the sauce ingredients together, set aside.

In a large skillet or wok, heat the olive oil over medium-high heat. Add garlic, broccoli, mushrooms and green onions. Stir fry until the mushrooms are tender and the broccoli softens.

Stir in the chicken, the sauce, half of the peanuts, and the pasta. Stir until combined and cook 1-2 minutes, until the sauce is heated through and thickens slightly.

Garnish with additional peanuts.

Cassie's Notes:
This could easily be made vegetarian by omitting the chicken and adding edamame and/or tofu for added protein.
