Spicy Hawaiian Pizza Grilled Cheese

I hope you aren’t sick of grilled cheese sandwiches yet because today I have my favorite of all, the grilled cheese-of-all grilled cheese sandwiches – the Spicy Hawaiian Pizza Grilled Cheese.  A while ago,  I shared a pizza dip with a Hawaiian twist and it was one of the most popular recipes on my blog last year.  And so, when I was brainstorming grilled cheese recipes, I couldn’t help but jot down Hawaiian Pizza Grilled Cheese as an option.

A few weeks ago Paul was playing a gig at a local pizza & pub with his friend Doug.  Doug’s wife Sarah and I were front and center as #1 fans should be and while we watched, we split a pizza.  Sarah swore by her new favorite pizza topping combo, which was pineapple, pepperoni and jalapeno.  I was a little skeptical but one bite and I was innnn love.

My parents visited Jamaica when I was young and I remember since then my mom being a huge fan of the Hawaiian pizza combination.  Paul has been a fan since I have known him and while I do like it, the Canadian bacon always threw me off a little.  BUT, thanks to Sarah, that is now remedied with pepperoni.  And of course, the added spice of the jalapenos is over-the-top genius.

So of course, I had to turn it into a grilled cheese.  And this definitely was my favorite that I made this month.  I made them, photographed them, we ate them and then Paul asked for another.  I call that a W.I.N.  Never will the Hawaiian Pizza be the same again.

Spicy Hawaiian Pizza Grilled Cheese

Yield: 4 sandwiches

Total Time: 25 min

Hawaiian Pizza Grilled Cheese with a spicy twist - pizza sauce, pineapple, pepperoni and mozzarella cheese!

8 slices sandwich bread
1/4 cup pineapple
1/4 cup pepperoni slices
2 small jalapenos, sliced (seeds & ribs removed as desired)
8 ounces mozzarella cheese, sliced or shredded
1/4 cup pizza sauce (homemade or store-bought)

Butter one side of each slice of bread. Place two slices, butter side down in the pan. Top with a couple slices of cheese, then a thin layer of pizza sauce. Top the sauce with 5-6 pepperoni, and then 7-8 pieces of pineapple, and a few slices of jalapeno. Add a little more sauce and a couple more slices of cheese and top with another slice of bread, butter side up.

Cook for about 3 minutes on the first side until the bread has browned and the cheese begins to melt. Flip and cook an additional 3-4 minutes until the cheese is melted and the outside of the bread is toasted. Remove from the pan. Repeat with the remaining bread and filling and serve hot.
