Shrimp Pad Thai Salad
OK, so, I have actually surprised myself lately with the number of salads I have been eating. Not necessarily because it’s January, but because I’m just craving them. I guess maybe it started around Thanksgiving with Marion’s Kale Salad but I’m not really sure. All I know is that I want as much color in my meals as I can stuff in there.
But the truth is – we really love carbs too. Like in an every-meal-should-include-pasta kind of way. So, yes, we could serve Shrimp Pad Thai with a nice simple salad on the side. But we could also make our Shrimp Pad Thai into a salad. Win-win!
This salad has all of the flavors you love of Pad Thai, I just left the noodles out and replaced them with romaine lettuce and red cabbage. The result is gorgeous and healthy. The dressing is amazingly flavorful, too. I used mostly the same ingredients you would use for Pad Thai sauce – lime, tamari, fish sauce, brown sugar, sambal oelek – and it created this spicy, super flavorful vinaigrette that I anticipate using for many salads to come. The salad is, of course, garnished with lime juice and peanuts for a little added crunch.
