I’m sure not color-blind.  I know this isn’t pink or red or anywhere on that spectrum, really.  So why am I posting almond butter for our breast cancer awareness week?  Well, for a few reasons:

1. Almonds are healthy for us in many regards – heart health, brain health and they are, in fact, known to contain vitamins and minerals that can protect our bodies from cancer.

2. Almond butter is also making its appearance here today because this version is homemade (obviously).  I believe in whole foods.  As much as I like cookies, brown sugar and buttercream, I truly love filling my body with things that are good for it.  Including homemade versions of things like almond butter.  Oftentimes the store-bought counterpart can be filled with extra sodium, preservatives and who-knows-what-else.  If I can in any way, I just like to make things like this myself.  Oh, and homemade almond butter is amazingly simple.

3. Lastly, I have really been wanting to post this recipe for a long time.  I started the blog to share some of my favorite recipes, and even thought there are 8,275,873.4 recipes for almond butter out there, my blog was missing one.  So, here it is.  That’s all.

Oh, and it’s ridiculously easy (I think I already said that.)  And it’s so stinking good.  And it’s much cheaper than buying it at the store.  And it’s fun to watch it transform from almonds to almond butter.  So, if you need more reasons that that to try it, I give up.  Just do it already!

Sea Salted Almond Butter

Yield: 2 cups

A homemade recipe for almond butter topped off with sea salt.

Ingredients:

2 cups dry roasted almonds
1 tsp. coarse sea salt

Directions:

Combine the almonds and sea salt in a large food processor. Turn on to process. Stop and scrape down the sides as needed. The almonds will go through several stages but will begin to release oils after a few minutes and the almonds will become creamy and smooth after several minutes of processing.

Cassie's Notes:
If desired, add two to three teaspoons of honey to the almond butter at the end of processing.
