Sea Salt Zucchini Brownies

The summer is winding down. Well, sort-of. We are still hovering around 100 degree highs around here but the extended forecast looks very fall-like with a high in the 70’s on Saturday. I’m ready for it. After two weekends in a row of crazy temps and being outside in those crazy temps, I’m ready for a break.
But I’m not ready for it without a few last bites of summer. I don’t know about you but it seems like everyone I know who grew zucchini, tomatoes, peppers, etc. this summer had a huge crop. I didn’t grow any of my own but I was lucky enough to benefit from a lot of hard work by my coworkers and friends. Garden-fresh zucchini doesn’t even begin to compare to off-season but I had a lot to use up quickly.
So why not sneak it in some sea salt fudge brownies and call it a day? A great way to use up some extra zucchini and I’ll never turn down an excuse to make brownies!

I love the sea salt!! These look so chocolatey and perfect! Plus, the zucchini totally makes them a healthy dessert, which means having 2 or 3 is no big deal! Yes!

It was 106 yesterday where I am. But you know, I’m ok with it. I lived in such cold climate for so long, that I’ve built up a huge tolerance for hot temperatures. And honestly, I wish summer never ended. My garden squash and tomatoes did not do well this year at all. I think Paul (my Paul) used a bad soil. So disappointing. But I can still buy zucchini and make these. Holy yum!
I do am still enduring 100 degree weather so the thought of pumpkin is so strange to me. I can get behind apple recipes but I am definitely more so still on the summer wavelength. I wish I had a garden to be using up summer produce from it, but all I have is a pot of basil. I’ll just have to go to the store and buy some zucchini!
