I decided to add a little meat to the final sandwich of the week.

I really am a meatless burger and sandwich kind of gal but for some odd reason I have been dreaming of prosciutto for a few weeks now…just not really sure what flavors I wanted, how I wanted to use it and what to pair it with.  I don’t even like pork so for me to dream of smoked ham, you know something is going on in my brain.

And then along came this sandwich obsession that I have going on.  I debated on whether to add some dates; I thought about adding some fresh herbs; I couldn’t decide between goat cheese and feta cheese.  But one thing is for sure: this sandwich r.o.c.k.e.d my socks off.

The salty prosciutto starts it out on just the right note.  And then the crunchy kale comes in with the sweet caramelized shallot and then the tangy garlic and goat cheese combination.  Are you drooling yet?  I hope so.  This one is 100% droolworthy and simple and it’s a sandwich for cryin’ out loud, what is not to love, my friends?

Prosciutto, Kale and Caramelized Shallot Sandwich with Garlic Goat Cheese Spread Recipe

Yield: 2 sandwiches

Total Time: 15 minutes

Salty and savory sandwich with a garlicky spread, sauteed kale and caramelized shallots and smoked prosciutto.

Ingredients:

2 tsp. olive oil
2 shallots
2 clove garlic, one minced, one left whole
1 cup fresh kale, cut into 1-2 inch pieces
Salt and pepper to taste
4 slices prosciutto
4 ounces goat cheese

Directions:

Heat olive oil in a medium skillet. Add the shallot and garlic to the pan and cook until caramelized and very fragrant, about 10 minutes. Remove the whole garlic clove and set aside.

Add the kale to the pan and sauté until wilted and softened. Transfer to a bowl and season with salt and pepper.

While the kale is wilting, toast four slices of bread. Meanwhile, place the goat cheese and the whole clove of garlic into the food processor and pulse until smooth.

Spread the goat cheese mixture onto both slices of bread. Add a few slices of prosciutto on top of the goat cheese, and top with the shallot/kale mixture. Top with additional slice of bread and serve.

Cassie's Notes:
Spinach would be a great alternative to the kale in this sandwich. If you don't like goat cheese, try feta or blue cheese instead.
