Pink Smoothie
All this talk about green smoothies is great, right? I love them, you love them. That’s settled. But can we talk for a moment? Green isn’t a very pretty color. And sometimes a break out of the ordinary should be welcomed. Enter Pink Smoothie!
I goes right along with our theme of promoting Breast Cancer Awareness this week (and month!) and it is still falls on the “healthy” side of the spectrum. Greek yogurt, carrot juice, lemon, apple and some red berries make this Pink Smoothie nice and sweet but full of vitamins, minerals and cancer-fighting antioxidants!
You won’t find any leafy greens in this one but it’s a fun break from spinach and kale. And the carrot juice adds a fun flavor! I’ll admit – it was an experiment. I grabbed some carrot juice from Trader Joe’s because I loved the deep color but had no idea how it would go with the red berries. But it succeeded at balancing perfectly with the sweet fruit. And the HoneyCrisp apple, my favorite this time of year, adds a perfect autumn finishing note!

Pink Smoothie Recipe
Yield: 2 (8-ounce) smoothies
Prep Time: 5 minutes
A healthy pink smoothie recipe with pink and red fruit, apple, Greek yogurt and carrot juice. A perfect breakfast or snack.
Ingredients:
1/2 cup frozen strawberries
1/2 cup frozen raspberries
1/4 cup frozen cranberries
1/2 a large HoneyCrisp apple, sliced (or one whole apple if yours is small)
1/2 cup Honey-Flavored Greek Yogurt
1/2 a lemon, peeled
1/2 cup carrot juiceDirections:
Combine all ingredients in a powerful blender, such as a Blendtec, and blend until smooth.

Make sure to buy the “no sugar added” varieties of frozen fruit.Feel free to use fresh fruit rather than frozen, just add in a handful or two of ice cubes before blending.
I used carrot juice because I loved the color and it was readily available. You could also use cranberry juice, pomegranate juice or apple juice.
