Are you recovered and back to “normal” after the long weekend? I don’t know that I am but I am trekking forward anyway!
We had a truly amazing weekend full of food, friends, gorgeous nights, and DIY projects. Life is good, there is no doubt!
I don’t typically eat a big breakfast but holiday weekends are an exception. They create a perfect excuse to sleep in (although I am terrible at that), drink loads of coffee, and make sweet cinnamon banana bread scones for those that you love.

Mushroom cookies friends. Could Heather Baird be any more creative? Well, in fact, she can. And the proof is in the SprinklesBakes cookbook. Heather’s creations take baking to a whole new level. Her writing is very easy to follow and the photography will have you drooling. The book is so colorful and recipes like Hazlenut Coffee Mousse, Mad Hatter Cake Pops, Blackberry Curd, Pomegranate Panna Cotta and Glittering Cookie Tree will have you in complete awe.

You guessed it – still stuck on chicken sausage. We can’t seem to get enough of it in our house. Possibly because it is available in 1,000 different varieties. Possibly, too, because it’s fairly healthy. Oh, and maybe because the awesome Al Fresco All Natural folks sent us a sweet care package. (Pun intended. Sorry.)

I’m absolutely in awe that Monday is Memorial Day. Wasn’t it just New Year’s Day 20 minutes ago?
I guess it is upon us regardless of whether or not our brains have caught up to the seemingly lightning fast speed of time these days. So, to celebrate, let’s talk about food. (Because what else would we talk about?!)
I am fairly certain that I will be making Caroline’s Whole Grain Chocolate Chip Cookie Cake because I can’t quit thinking about how gooey the center looks. Yes, I constantly dream about cookies.
Paul and I will be spending the weekend at home, hopefully relaxing, catching up on housework, cooking and baking and photographing food, etc. Well, at least that’s what I’ll be doing. I have my eye on this pizza from Confections of a Foodie Bride. I’m such a fan of veggie pizza and the goat cheese and broccoli are absolutely calling my name here.
We had black bean quinoa burgers for dinner on Monday night. Last night Paul used the leftovers to make a black bean burger quesadilla. He suggested that I do a “leftover week” similar to “sandwich week” that would showcase what we do with leftovers. Weird? Or cool?
And lastly, I am making some Crack Pie for a potluck that I have next Wednesday. I am going to need some major self-control to be able to make these and not dig into them until then. Send prayers!
