For some reason I’ve been thinking about Oreos lately.  And cheesecake.  And brownies too.  Please tell me I’m not the only crazy person who walks around thinking about what I’m going to cook and/or bake when I get home.  I’m admitting that sometimes sweets totally consume my thoughts.  I know it is probably not healthy in any sense of the word but I just can’t help it.

I think I’ll blame Paul for this one.  My nephews bought Paul Oreos for his birthday and they’ve just been sitting in the cabinet enticing me to eat them.  I have resisted so far but couldn’t stop thinking about what I could create with milk’s favorite cookie.  Adding cream cheese to chocolate is pretty dreamy…and I know that Oreos mix well with cheesecake.  So, why not mix all three together?  It seemed like a smart move to me.  Paul was a little skeptical.  He wasn’t sure that the different chocolates would mesh well but they pretty much did.

The brownies were dense and not too sweet and were offset by the sweet cheesecake filling.  And the great Oreo taste sneaked in at just the right time.  The cookies softened while baking so they add just a little something extra every couple of bites.  The brownies weren’t too rich but if you aren’t a big chocolate fan, I would cut small squares.  The best part is that these are super simple to pull together!

Oreo Cheesecake Brownies

Ingredients:

Brownie Mix:
6 tablespoons unsalted butter, cut into small pieces
4 ounces semisweet chocolate, chopped into small pieces
2/3 cup granulated sugar
2 large eggs, at room temperature
1/2 cup all-purpose flour
1 Tbs. unsweetened cocoa powder
pinch salt
1 tsp. vanilla extract
12 Oreo Cookies (or other chocolate sandwich cookies), crushed into small pieces

Cheesecake Filling:
8 ounces cream cheese, at room temperature
1 large egg yolk
6 Tbs. granulated sugar
1/2 tsp. vanilla extract

Directions:

Preheat oven to 350 degrees and line an 8-inch square baking dish with foil, allowing the foil to go up the sides of the baking dish. Spray with non-stick cooking spray.

Add the butter and semisweet chocolate to a medium saucepan. Melt over low heat and stir until a smooth mixture forms. Remove from the heat and add in the granulated sugar, then the eggs, fully incorporating. Add the flour and vanilla and salt and mix well.

Gently stir in the crushed Oreo cookies and gently spread into prepared baking pan.

In a separate bowl, beat the cream cheese, egg yolk, granulated sugar and vanilla until smooth. The texture will resemble that of cheesecake batter. Dollop the cream cheese mixture on top of the brownie batter and gently swirl the mixture with a knife to incorporate.

Bake for 35 – 38 minutes or until a toothpick inserted in the center comes out clean. Let the brownies cool then remove from the pan, peel away the foil and cut into even squares.
