Oatmeal Cinnamon Chip Skillet Cookies

I don’t know about where you are, but this weekend was BEAUTIFUL in central Missouri!  Saturday the sun was shining and the temperature got up to 72!  In February!!  Paul and I bought each other new bikes for Christmas and this was the first chance that we have had to get them out.  We ended up riding about 13.5 miles on the Katy Trail.  Paul and I decided that Missouri winters are great because, even though we might have some snow and ice, we have the chance of spring-like weather at any given point in time, all without the humidity and bugs of spring!

We finished out our Saturday with watching Gone Girl.  I read the book a while back and loved every part of it.  I know a lot of people didn’t care for the ending but I loved it and the movie was pretty spot on.  The acting was great and it was really interesting to recognize some of the scenes which were shot in Missouri.  All-in-all I have to say that this weekend was top notch.  Sunshine definitely does wonders for the soul!

Oatmeal Cinnamon Chip Skillet Cookies

About these skillet cookies…I have been all about skillet cookies recently.  I think mostly because I love the texture of the outside edges of the cookies.  And they are so easy!!  I used the base of my favorite oatmeal cookies for these, and just made the recipe a little smaller.  The outsides are perfectly crunchy and the middle is soft and chewy.  Cookie perfection!

Oatmeal Cinnamon Chip Skillet Cookies

Yield: 2 (5-inch) Skillet Cookies or 1 (9-inch) Skillet Cookie

Ingredients:

1 cup old fashioned oats
2/3 cup flour
1 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
6 Tbs. butter
1/3 cup brown sugar
1/3 cup granulated sugar
1 egg
1/2 tsp. vanilla extract
1/2 cup cinnamon chips

Directions:

Preheat the oven to 350 degrees. Mix oats, flour, cinnamon, baking soda and salt in a small bowl.

In a separate bowl, mix the butter and sugars until well-combined. Add the egg and vanilla extract and mix for 2-3 more minutes until very smooth. Add the dry ingredients and mix just until combined, and then stir in the cinnamon chips.

Divide the dough evenly among two 5-inch cast iron pans (or one 9-inch or 10-inch pan) and bake for 12-14 minutes (16-18 for a larger pan), or until the edges are just beginning to brown, and the center is set. Remove from the oven and allow the cookies to cool. The centers will continue to bake as the cookies cool.
