Mini Peanut Butter Pies *For Mikey*

I know I posted today already.  I don’t even post every day, let alone twice per day.  But this is special, read on…
Until this week I was only acutely aware of how much you can hurt for someone who you barely know.  Jennifer Perillo of In Jennie’s Kitchen suddenly and unexpectedly lost her husband, Mikey, this week.  My heart aches for her.  The tragedy has struck the whole blogging community and I’m amazed and overwhelmed by the love and ourpouring of support that has been shown.
Jennie posted this recipe for Peanut Butter Pie, which was Mikey’s favorite. She asked her readers to make a peanut butter pie on Friday and share it with those we love.  I wasn’t able to make one on Friday but I did it today.  I am so blessed to be associated with a group of people who care so much for others in their community.  Although I didn’t know Jennie personally, I hope and pray that she is comforted by the support and love of her blogging friends.
Jennie’s story has inspired us all to live in the moment, to not neglect to tell the ones we love that they mean the world to us.  We truly never know if we’ll have another chance to say it. Carpe Diem!Jennie, my thoughts and prayers are with you and your daughters.  I pray that you receive the strength and courage you need every day.  I’m so deeply sorry for your loss.

Mini Peanut Butter Pies Recipe
Ingredients:
6 Oreo cookies
2 Tbs. butter, softened
2 ounce cream cheese, softened
1/3 cup creamy peanut butter
1/2 tsp. vanilla extract
2 Tbs. milk
Pinch salt
1 cup powdered sugar
2 Tbs. chocolate chips (optional)
Prep:
Line a small muffin tin with 6 liners. Place an Oreo (or other sandwich cookie) in the bottom.
In the bowl of a stand mixer, cream the butter, cream cheese and peanut butter until smooth. Add the vanilla, milk and salt and mix until combined. Add powdered sugar in three batches, mixing thoroughly after each addition. Fold in the chocolate chips.
Scoop into the prepared muffin tins and refrigerate for 1 hour or until set. I chose to sprinkle the chips on top of the pies instead of folding them in…either way will be delicious.

    Cassie… I just read about this today on another post and sent a note to Jennie, though I don't know her either. You are right about this food community….and I pray she takes comfort in knowing that even total strangers are supporting her. Your post was lovely to read.

    Such a lovely tribute and reminder, Cassie. The outpouring of support for Jennie has been so amazing. I don't think any of us will ever look at a peanut butter pie quite the same. We will always be reminded of Jennie and Mikey, and we will remember to hold those we love a little tighter.
