Loaded Tots with Homemade Nacho Cheddar Sauce

Anyone want to tell me why anytime I think, hear, speak or type the word “Miami” I can only think of Will Smith?  “Party in the city where the heat is on…”  Please, please, please tell me you think of that song too.  Please?

On Wednesday this week I am headed to sunny (and humid) Miami for this year’s BlogHer Food conference.  And if it’s half as good as last year’s conference in Austin, I will come home a happy blogger.  I have never been to Miami so I’m excited for a new city to explore.  I’m excited to see my friends, meet some new friends and soak up some sun!

So what do loaded tots have to do with BlogHer Food in Miami?  Well they have almost everything to do with this trip because my friends at Kernel Season’s are graciously sending me to Miami on their behalf.  You all know how I feel about popcorn so I literally jumped at the opportunity to work with a popcorn seasoning company.  These guys are legit and I honestly have a popcorn and popcorn seasoning stash to last me for the rest of the year.

And with that stash, I used one of my favorite seasonings – Nacho Cheddar – to add some extra cheesiness to this homemade cheddar sauce.  My obsession with good fries and tots can almost be compared to my love of popcorn so I decided to combine the two to make these Loaded Tots & Homemade Cheddar Sauce.  They are super simple and perfect for snacking!

Loaded Tots with Homemade Nacho Cheddar Sauce

Yield: 6 servings

Total Time: 30 min

Loaded Tots with Homemade Nacho Cheddar Sauce topped with jalapenos, green onions, red onions, tomatoes, bacon and cilantro.


for the tots:
19 ounce bag frozen tots
4 green onions, sliced
1/2 pint grape tomatoes, quartered
1/2 cup red onion, coarsely chopped
2 jalapenos, sliced
3 slices (about 1/4 cup) crispy bacon, finely chopped
1/2 cup fresh chopped cilantro

for the cheese sauce:
1 Tbs. butter
1 Tbs. flour
1/2 cup milk
4 ounces sharp cheddar cheese, shredded
2 tsp. Kernel Seasons Nacho Cheddar Seasoning
1/4 tsp. black pepper


Preheat the oven to 425 degrees. Spread the frozen tots in an even layer on a rimmed baking sheet. Bake for 24-25 minutes or until crisp and golden brown.

When the tots have about 10 minutes of baking time left, prepare the cheese sauce. Melt the butter in a medium sauce pot. Add the flour and whisk until combined. Whisk constantly for about 1 minute until the mixture is nutty and beginning to turn brown. Whisk constantly while adding the milk and continue to whisk until the mixture thickens. Stir in the cheese and then the seasoning & pepper. Stir well until combined and smooth.

Transfer the cooked tots to a serving plate or pan. Pile them high and top with the nacho cheese sauce. Top with the additional toppings and serve immediately.
