Jumbo Fluffy Sugar Cookie
You all know that I love cookies. You know what else I love? Blogging and bloggers. I have some amazing blogger friends, including Mercedes of Satisfy My Sweet Tooth. I am so excited to be guest posting for her today.
I couldn’t stop with just the jumbo oatmeal cookie. I worked at it a little and came up with a jumbo sugar cookie that is fluffy, and sweet, and topped with SPRINKLES. And who doesn’t love sprinkles? Jumbo Fluffy Sugar Cookie
Yield: 1 jumbo cookie (or 4 small ones)
Prep Time: 5 minutes
Cook Time: 14 minutes
Because sometimes you just need one cookie!
Ingredients:
2 Tbs. butter, room temperature
4 Tbs. granulated sugar
2 Tbs. beaten egg
1/2 tsp. vanilla
6 Tbs. flour
1/4 tsp. baking soda
1/4 tsp. kosher salt
1/4 tsp. cream of tartarDirections:
Preheat oven to 350 degrees. Line a small cookie sheet with parchment paper.
In a medium-sized mixing bowl, stir the butter and sugar together until creamed. Add the egg and vanilla and mix.
Stir in flour, baking soda, salt cream of tarter and stir until fully incorporated.
Place the dough in the center of the prepared cookie sheet and bake for 13-15 minutes, until the edges are browned.
Cool completely on a wire rack.

That’s the biggest cookie I’ve ever seen. That would feed 3 of me but it’s got sprinkles so maybe I could force the whole thing down. 🙂 Yummy.

I just baked and ate this cooky and thought I’d say what I’ll do different next time. First, my cookies (made a small one and a larger one from the one batch of dough) came out the oven nicely browned around the edges, but flat and flat could be. The edges of both cookies were nice and chewy once they cooled, and the middles remained soft. Since I prefer chewy cookies, next time I’ll make several smaller cookies from the recipe. Also, the Kosher salt pieces were a little much for my taste, so I’ll use regular salt next time. Also, they really weren’t very sweet (maybe because of the big pieces of salt), so next time I’ll sprinkle them with sanding sugar or regular sugar before baking. (Please read this with your typo filter on – it won’t let me go back to make corrections.)
I just baked off one of these giant cookies!! I must say that it smelled great, but was very flat compared to the picture and wasn’t very sweet. Also I could taste both the baking soda and cream of tartar when paired with the kosher salt left my mouth very briny. I’m not quite sure what went wrong but I was very upset that this cookie didnt turn out.
Wow! This was really yummy! I added a drop each of almond and lemon extract with the vanilla. Also a shake or two…or three…of multicolored sprinkles. It got SO big and fat in the oven,but when I took it out,it flattened right out. Developed crackles-it was crispy sugary on the surface and soft and butterly delicious in the inside!! Ding! Ding! We have a winner!!?
