Sometimes I just want one cookie. My sweet tooth has a tendency to get out of control and the only way to keep it from taking over is to have a cookie. So what’s the problem? Most recipes make two or three dozen and sometimes my self control isn’t in the place where it can handle a whole recipe.
Jenny solved my problem when she posted this jumbo chocolate chip cookie (for one!) I like chocolate chip cookies, don’t get me wrong but my heart belongs to oatmeal cookies, especially oatmeal with butterscotch chips. Nothing is better than a chewy oatmeal cookie with lots of cinnamon and butterscotch.
Jumbo Cinnamon Butterscotch Oatmeal Cookie
Yield: 1 jumbo cookie (or 4 small ones)
Prep Time: 5 minutes
Cook Time: 14 minutes
Sweet jumbo oatmeal cookie...for one!
2 Tbs. butter, softened to room temperature
2 Tbs. granulated sugars
2 Tbs. packed brown sugar
2 Tbs. beaten egg
1/4 tsp. vanilla
4 Tbs. flour
4 Tbs. old-fashioned oats
1/4 tsp. baking soda
1/4 tsp. kosher salt
1/4 tsp. ground cinnamon
2 Tbs. butterscotch chips
2 Tbs. cinnamon chips
Preheat oven to 350 degrees. Line a small cookie sheet with parchment paper.
In a medium-sized mixing bowl, stir the butter and sugars together until creamed. Add the egg and vanilla and mix.
Stir in flour, oats, baking soda, salt and cinnamon and stir until fully incorporated. Add in butterscotch chips and cinnamon chips and stir.
Place the dough in the center of the prepared cookie sheet and bake for 13-15 minutes, until the edges are browned.
Cool completely on a wire rack.
