Honey Wheat Waffles

Bridal showers abound!  I have had three and they have all been so wonderful!  My hand hurts from writing thank-you’s but it’s so completely worth it.  After making my way through everything I have finally gotten to use a couple of gifts and the first – the lovely waffle iron from my wonderful friend Tonya.  It’s so pretty and I’ll tell you the best part – it was almost self-cleaning!  The waffles came right now and nothing stuck, it was wonderful.  I have never had a waffle iron but I believe that this one will be used and loved!
Ironically, Paul worked at a Waffle House in high school so he is pretty savvy when it comes to cooking breakfast.  Let’s just say that I very rarely cook eggs for us.  However, when it came to our new waffle maker, I was determined to try it out first.  I found this recipe a few weeks ago from Joy the Baker who used bacon for these waffles.  While I think bacon is OK, it’s not my favorite so I adapted this recipe to my liking.  I also made it using whole wheat flour to add a little extra nutrition. Paul wasn’t a huge fan of the wheat flour so if you have a waffle lover in your house, I suggest sticking to white flour for these.  They were pretty tasty though and we had lots leftover.  If you are only cooking for two, halving the recipe would still make lots of waffles!

Honey Wheat Waffles (printable version)
ingredients:
3 cups whole wheat flour
1 Tb. baking powder
1 tsp. baking soda
1 tsp. salt
1/4 cup brown sugar
1/3 cup canola oil
4 large eggs
2 tsp. vanilla extract
2.5 cups buttermilk
1 Tb. honey
2 tsp. ground cinnamon
prep:
Preheat waffle iron.
Combine first five ingredients in a medium bowl and whisk to mix well.  In a large bowl, whisk eggs, oil, buttermilk and vanilla extract, add the honey and cinnamon.  Add the dry to the wet and fold together.  Be careful not to over mix, a few lumps is OK!
Cook according to waffle iron instructions.
Serve with peanut butter, powdered sugar, honey, cinnamon, strawberries, peanut butter or any other toppings your heart desires!

    Well after seeing this, I have deemed my recent breakfasts to be quite boring. Guess I will have to perk things up with these delicious waffles. Lovely post and recipe.
