Herbed Chicken Soup with Orzo


Yes, it is spring but I couldn’t help posting this soup.  I really love soup, even in summer and this one is no exception.  I have had a bit of a fetish with orzo pasta for the last several months.  I just love it.  It’s so cute and versatile and it’s a perfect addition to lots of different soups. 
This is a quick soup that is easily adapted to your liking.  Our days and weekends are busy with making final wedding plans so I love having this kind of recipe up my sleeve!  (Still counting down…21 days to go!)  Everyone loves a basic chicken soup recipe with fresh veggies and herbs.  I had fresh rosemary and thyme on hand but any fresh herbs would be delicious here.  I even used a little help from the store with a rotisserie chicken.  I absolutely love rotisserie chicken but any kind that you choose will be great too.
Herbed Chicken Soup with Orzo  (printable version)
ingredients:
  • 1 Tb. butter
  • 1 Tb. olive oil
  • 1/2 large yellow onion, diced (or 1 medium)
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 1 Tb. fresh rosemary
  • 1 Tb. fresh thyme
  • 2 cups chicken, cubed or shredded
  • 64 ounces chicken stock
  • 1.5 cups orzo pasta
  • Salt-n-pepper to taste

prep:
heat butter and olive oil in a large dutch oven or soup pot over medium-high heat.  Add garlic and onion and sauté for two minutes, until fragrant.  Add celery, carrots, bay leaf, rosemary and thyme and cook until onions are soft and translucent and herbs are fragrant.  Add the chicken and stock and mix.

Bring soup to a gentle boil and reduce heat.  Simmer for 45-60 minutes.  The longer, the better but if you are in a hurry, as little as 30 minutes will do.

Bring soup back to a boil and add orzo pasta, cook to al dente and season with salt and pepper as needed.

If you prefer a more brothy soup, feel free to cook the orzo in a separate pot and add to soup before serving.

    I think soup is great anytime of the year! This one looks so quick and easy yet flavorful! I have not tried orzo in my chicken soup but what a great idea.
    I am sure your wedding will be awesome. Try to keep some nice relaxation time in the mix too for the next few weeks :-
    I think we will have almost the same anniversary…couple days difference. Mine is May 9.
