Heart-Shaped Frosted Shortbread Cookies
Well, if you live anywhere in or around the Midwest, you may or may not be thawed out yet. If you don’t live in the middle of the country, let me fill you in: snomageddon part sixteen (not that I’ve been counting) dumped on us this week. That’s right, the minute we landed back in Missouri from the warm and sunny Dominican Republic, the sky opened up and down came the snow. At least I got to enjoy a few days of sunshine and warmth last week? It was truly gorgeous. And so amazingly relaxing. Just thinking about our time there makes me happy. Also, thinking about shortbread cookies makes me happy.
If I can’t have sunshine and 85 degrees in the Caribbean, I might as well be enjoying some sprinkly, frosted heart-shaped shortbread cookies, right?
I will say, though, that I don’t particularly hate the snow. It’s so pretty and I’m lucky enough to have just a few minutes-commute to work. My company closed the office early on Tuesday so I got to spend the afternoon baking. Wednesday I actually had the day off for my birthday. Yes, they give us the day OFF for our birthday. I’m pretty lucky, I think. So I baked more and ate shortbread cookies between vegging on the couch and drinking coffee. It was a marvelous birthday.
And obviously, I have a little-tiny-bit of a fetish with shortbread cookies. I haven’t always been a fan and – I know I’ve told you this before – it all started when I had my first bite of a Panera Bread shortbread cookie. So buttery. They can’t be beat. These are super simple – only flour, salt, powdered sugar, butter, and vanilla; they chill a bit, you cut them out, you bake and voila – perfect, super buttery shortbread cookies for your sweetheart. A little frosting, a little a truck load of sprinkles. And your sweetheart will be blushing. Or you can keep them all to yourself!
