Guacamole Queso Quesadilla

You might already know how I feel about leftovers. The older I get, the more I like them. Some things, yes, I’m OK with reheating two or three days later.

Other things – like this spinach queso – I could not wait until the next day to have another bite! So what do I make? Nothing other than a quesadilla! The night before (when I made the queso), we also had shrimp enchiladas, guacamole, chips & salsa and margaritas. I told you that I was missing our favorite Mexican restaurant!!

We had leftovers of each thing so I took the opportunity the next day for lunch to play around with these, some of my favorite ingredients ever, to come up with a fun quesadilla. And did I ever. This one was so fun, so simple and bursting with flavor. It was quite the messy one to eat but so extremely worth it!

I made one for Paul for dinner that night too, and he loved it. This just might make me a leftover lover yet!

Guacamole Queso Quesadilla

Guacamole Queso Quesadilla

Yield: 1 quesadilla

Total Time: 20 min

A round two recipe using my homemade spinach queso and guacamole - put together for a quick weekday quesadilla lunch or snack.

Ingredients:

2 tsp. olive oil
1 large flour tortilla
1/4 cup queso
1/4 cup guacamole (see note below)
2 tsp. lime juice (about 1/4 of one lime)
1/2 cup grape tomatoes, halved (I used 5)
1 Tbs. fresh chopped cilantro

Directions:

Heat the oil in a large skillet over medium heat.

Fold the tortilla in half and then open back up. On one half of the tortilla, spread the guacamole. Top with the cilantro, lime juice and grape tomatoes. Gently spread the queso on top. Fold the other half of the tortilla onto the ingredients. Gently place the tortilla in the heated pan.

Cook for about 4 minutes and then gently flip and cook an additional 4 minutes until golden brown. If you prefer the tortilla to be more crispy, continue to cook for a couple of additional minutes.
Cut with a pizza cutter or sharp knife.

Cassie’s Notes:
I make the simplest of simple guacamole but this is how we like it! (This recipe makes a lot but I love it leftover.) 3 avocados, smashed, 2 cloves garlic, minced, 1/2 cup fresh cilantro, chopped, juice of 1 lime, salt & pepper to taste. Mix them all up in a large bowl and adjust seasonings to taste. Sometimes I will add a little chopped red onion but it’s rare that I do that.

    I love you and I love how much you love avocado and queso. And I love you EVEN MORE (is that possible?) for combining them into a quesadilla!!! PS: I could eat guacamole with a spoon. In fact, I actually do that.
