Greek Yogurt Gingerbread

I hope you had a very merry Christmas!  I took a few days off and enjoyed lots of family and friends and of course a ton of food!  I am back to work today but I am so excited to share this gingerbread recipe with you – Greek yogurt gingerbread, that is.

Greek yogurt has become a kitchen staple for me.  I just love the creamy texture it adds to sauces and dips without adding tons of fat. And in baking – it creates the most tender and moist breads and cakes.  I have started keeping vanilla and plain Greek yogurt in the fridge at all times.  And anytime something calls for sour cream or mayo, I go straight for those yogurt containers.

Quick breads are also a go-to for me.  We love beer bread, pumpkin bread, banana bread, etc.  And around the holidays, as I mentioned last week, ginger is a must.

Most of you know my good friend Ali so you probably know that she is fluttering around Europe having the time of her life.  She’s been there for a couple weeks and has a little while longer.  So while she is there, I am sharing the recipe for this Greek yogurt gingerbread with her as well.  Go tell Ali hi and check out the recipe at Gimme Some Oven.

    This sounds so good! Hm, I don’t have molasses – what do you think of using amber agave in place of it?

      Hi Shaina, you could use agave or honey but it will greatly change the flavor of the bread. If you do make the substitution, I would say add 1/4 cup brown sugar to try to maintain some of the rich flavor. Hope you enjoy! C.
