Creamy Feta Pasta with Sweet Italian Chicken Sausage

Sometimes the simplest of meals turn into some of my absolute favorites!  I hadn’t planned on blogging this pasta but I took one bite and did a quick photography setup because I had to share these flavors with you.  I’m a lover of simple, simple pasta dishes.  The ingredients in this dish are ingredients that I have in the house all the time and this dish came together so quickly and simply.  Served with a glass of wine, it would probably even make a great date night dinner!

Chicken sausage is one of my favorite things, I think.  Right now, that is the truth anyway.  Especially because I have hard time finding it here.  But I found some of the Sweet Italian Chicken Sausage variety and I just started with some basic flavors – tomatoes, green onions, rosemary and feta cheese.  I think I really underestimated how well the tangy feta would pair with the flavors of the sausage.

Holy moly – I can’t even explain it.  The cheese made this crazy creamy sauce for the pasta and the flavors all worked together so well!

Creamy Feta Pasta with Sweet Italian Chicken Sausage

Yield: 2 servings

Prep Time: 10 min

Cook Time: 20 min

Total Time: 30 min

Simple and flavorful weeknight meal: Creamy Feta Pasta with tomatoes, Parmesan cheese and sweet Italian chicken sausage coins.

Ingredients:

6 ounces egg noodles
3 sweet Italian chicken sausage links, sliced
2 tomatoes, diced
2 Tbs. fresh rosemary, chopped
1 green onion, diced
1 Tbs. butter
1 Tbs. olive oil
4 ounces feta cheese
2 ounces parmesan cheese
1 clove garlic

Directions:

Cook egg noodles according to package. Reserve 1/4 cup pasta water before draining.

White the noodles cook, brown the chicken sausage coins in a large skillet until warmed through and golden brown, about 5 minutes on each side. Add the tomatoes, green onion, rosemary, butter and olive oil and cook, stirring often, until the tomatoes are softened. Add the cheeses, the reserved pasta water and the cooked egg noodles.

Serve with additional cheese for garnish, if desired.

    I agree! When I first bought chicken sausages it was mainly because they seemed healthier… I had no idea they would taste AMAZING!

    Chicken sausage is a favorite around here too. We like the spicy! This pasta sounds perfect. Simple is always good. I think some of the simplest dishes are some of the best!

    I love that you used egg noodles, I so rarely think to buy those! Between the cheesy sauce and the sausage, this would definitely be a huge hit at our house!

    Looks great! I have a really gross story about chicken sausage (I won’t tell it here). I’m sure it was a totally freak thing but I haven’t been able to buy it since. This pasta might be enough to get me back on the chicken sausage horse. ;)

      Hi Kerry, I honestly prefer Trader Joe’s chicken sausage to any other variety but my next favorite is Al Fresco Gourmet, it’s usually found in the health section of the store, or in the frozen foods. I haven’t found any that I don’t like, though!

    chicken sausage is so underrated, we all need to use it more. it’s SO good. i got some from trader joe’s once and we couldn’t stop eating it. i can see why this pasta is so delish and creamy. i love the use of the feta in here!
