Confetti Poke Cake
I just had to take a big deep breath before starting to write this post. Is time flying by for everyone like it is flying by for me? I’m telling you – it’s crazy! Like, how is it August tomorrow? I have no idea. We are talking school supplies, football and butternut squash and hay rides. Am I complaining? Not at all.
But this summer has been pretty amazing. For one thing, the weather has been outstanding for summers in Missouri. I went on a run yesterday after work at 4:30 and it was only 75 degrees, with no head index…totally unheard of!
So for that reason and more, I’m not totally ready for summer to be over. Also, I’m still stuck on summer food. Zucchini, avocados, tomatoes, and sprinkles, of course. Not that sprinkles aren’t appropriate at other times of year, it just seems that they are extra-appropriate in the summer.
And combined with a poke cake? Oh yeah, summer = defined by poke cake! I grew up on it. It’s chilled, served with whipped cream and makes a perfect dessert for summer cookouts. And then only way to make a poke cake better? Add some colorful confetti, of course!
This cake is sweet, super vanilla-y, extra-moist and a perfect compliment for strawberry gelatin filling. The homemade vanilla whipped cream is the perfect flavor and texture compliment to the cake and kids will go crazy for this cake…summer or not!

I love that you posted this! Brings back such great summer memories! My mom also used to make a pudding poke cake with yellow cake and chocolate pudding. Ever try that one?

My aunt makes poke cakes but she calls the “strike it rich” cakes – lol. Oh and she uses heavy cream when making the pudding (instead of milk)……..

How freakin’ fun is this cake? I even have everything but the sprinkles… because my oldest daughter decided to put them away with the lid not on tight. Sprinkles were EVERYWHERE!! Love this cake Cassie!

Another person over here ready for fall! Fall is my favorite season, just your mention of hay rides and I am ready to light my pumpkin spice candle. I will savor the rest of summer though since I am just now getting red tomatoes on my plants. And also make this cake, because it has sprinkles 🙂

You’re definitely not the only one. We’ve had crazy cool temps here in Ohio as well. It’s felt amazing, but I’m definitely not ready for summer to be over. Also, it kind of freaked me out that I could wear a sweatshirt to the Ohio State Fair. It’s just not right. Maybe if we keep making poke cakes, summer will get the hint and hang around a while longer!
