Confetti Cookies for Two
Apparently, it’s the week for sprinkles. I didn’t plan this out but we will run with it. Maybe my sprinkle kick has something to do with sunshine and 70 degrees. Who knows!
I promised cookies so here we are, finally Friday, delivering cookies. Confetti cookies, that is. Confetti cookies for two, to be exact!
I made a big, jumbo confetti cookie a week or two ago. Paul thought I was going to share but I had BIG plans to eat the whole thing by myself. You know, sometimes you just want a cookie after dinner. Not a whole batch of three-dozen cookies; not a big bowl of ice cream; not a pan of brownies. But just ONE cookie.
The solution: a small batch of confetti cookies. This recipe makes two (still nearly jumbo) cookies: one for you, one for your loved ones. Or you can go ahead eat both yourself. No one is watching!
And these fun pastel sprinkles? Just could.not.pass.them.up. How could you pass up fun spring colors like these? I hope the sun is shining in your neck of the woods today. Happy weekend to you, friends!

Confetti Cookies for Two
Yield: 2 cookies
Total Time: 10 min
A sweet and simple recipe for confetti cookies for 2!
Ingredients:
2 Tbs. butter, room temperature
1/4 cup granulated sugar
2 Tbs. lightly beaten egg
1/2 tsp. vanilla extract
1/4 cup + 1 Tbs. bread flour
1/4 tsp. baking soda
1/4 tsp. salt
2 Tbs. rainbow jimmiesDirections:
Heat the oven to 350 degrees. Line a 9x13 cookie sheet with parchment paper or a Silpat liner.
In a small bowl, use a fork to mash the sugar into the butter. Stir until well-combined. Add the egg and vanilla and stir well. Add the flour, baking soda and salt and stir until combined. Stir in the sprinkles. Divide the dough evenly into two dough balls and place about 3 inches apart on the prepared cookie sheet.
Bake in the preheated oven for 8-9 minutes until the edges are just beginning to brown and the center of the cookie is still slightly underdone. Cool on the cookie sheet.
My kids would be in heaven! So adorable!
