Coffee Cookies

Certain things in life deserve a cookie dedicated to their existence.  Things such as coffee.  Coffee is a significant part of the day for a lot of people.  It’s the first thing I do when I get out of bed.  It’s a comforting thing to enjoy a cup of coffee, whether sitting quietly in the living room, or sitting with a friend in deep conversation.  The first – let’s face it – hour of some work days is spent around the coffee pot.  Coffee is certainly a big part of life.

So it seems obvious that coffee needs it’s own cookie.  I grew up dipping chocolate chip cookies in my coffee, but there is something about adding fresh coffee grounds to cookie dough that changed my life.  Se also: Cinnamon Toffee Coffee CookiesCinnamon Clove Coffee CookiesCompost Cookies and Coffee & Cream Oatmeal Cookies.  So naturally, straight up coffee cookies seemed like the next logical step.

The base of the cookie is similar to the above cinnamon toffee and cinnamon coffee cookies: a simple sugar cookie base, with some fresh coffee grounds added in.  I started adding fresh coffee grounds to my cookies thanks to Christina Tosi.   It’s pure genius – like the worlds of fresh vanilla beans colliding with teeny tiny chocolate chunks.  It’s just simply cookie perfection.  I used a holiday blend for these which had notes of chocolate and toffee.  You can use any coffee that you have, but use a good coffee that you would actually enjoy drinking, because the flavors of the beans do come through to the cookies.

Keurig 2.0 Review

After our little kitchen facelift this fall I made myself a little coffee bar to the side of the breakfast nook in our kitchen.  Our coffee pot had taken up too much of our limited counter space so this seemed like the perfect solution.  I used a table that I thrifted several years ago in Kansas City.  Our pot rack is hanging directly above this table.  I topped it with our new Keurig 2.0 Brewer, the carafe that goes along with it, along with a big jar to hold our K-Cups and tea bags.  And there’s a little painted “L” there.

We have been using our Keurig 2.0 Brewer for several months now and to say that we are smitten is a slight understatement.  I had wanted a Keurig for quite a while, but had just stuck with the regular coffee pot mostly because we are pretty big coffee drinkers, so brewing one cup at a time seemed to be a little wasteful and time consuming.  That was, until the 2.0 came along with the ability to brew a carafe.  And that changed it all for me.

Coffee Cookies & Keurig 2.0 Review

My friends at Keurig provided us with a 2.0 Brewer (the K550 model), stainless steel carafe and an assortment of K-Cups to try out and we have not looked back.  Here are a few big positives for me:

– The brewer brews up to 4 cups at a time with the carafe
– 80-ounce! water reservoir
– Programming features
– Hot water on demand (I love tea just as much as I love coffee!)
– The cups are recyclable (another reason I held out for so long)
– It’s great when you just need a small amount of coffee for a recipe
– Paul and I can both have the kind of coffee we like (very quickly, too!)

Notes about the system:

– Keurig 2.0 brewing technology reads the top of each K-Cup to brew the correct beverage.  This has been a negative to a lot of consumers because old K-Cup packs, and off-brand packs are not compatible.  In addition, you can’t use the reusable packs that are available to fill with your own coffee.  At first I didn’t like this feature because I did want to use my own coffee, but over time I haven’t been bothered by it.  I have found plenty of K-Cup packs that I really like.  I hope that there will be options in the future for using your own reusable filter, but for now I’m OK with it.

– After using the brewer for a couple of months, our brewer started to brew very slowly and make a funny noise.  After reaching out to my contacts, we discovered that one of the needles was clogged and found an easy fix via YouTube, and it’s worked like a charm since.  Keurig’s YouTube channel has a lot of helpful video tutorials on how to descale the brewer, how to clean the brewer, etc.

– Everyone asks if using the Keurig and K-Cup system is more expensive for us.  Yes and no.  The cups are slightly more expensive than buying regular coffee.  However, I never really bought cheap coffee to begin with so I don’t feel like I’m spending much more than I used to.  In addition, I watch the ads of local grocery stores and stock up when K-Cups are on sale, and I use online stores like Big Cat Coffee and order when I have a coupon.

As I mentioned earlier, we haven’t looked back since setting up our Keurig 2.0.  Even with lots of company during the holidays the Keurig allowed everyone the make their own cup of coffee, and it was hot and fresh when they were ready for it.  I have to say that I’m sold!

Coffee Cookies

Coffee Cookies

Yield: 36 cookies

Sweet and simple and studded with tons of coffee flavor: Coffee Cookies!

Ingredients:

2 1/4 cups unbleached bread flour
2 tsp. baking powder
1/2 tsp. salt
1 cup butter, room temperature
1 1/2 cup granulated sugar
2 eggs
1/2 tsp. vanilla extract
1 1/2 Tbs. fresh coffee grounds (not instant coffee)

Directions:

Preheat oven to 350 degrees. Line two large cookie sheets with parchment or Silpat liners. Set aside.

In a large bowl, mix the flour, baking powder, and salt together and set aside. In the bowl of a stand mixer, cream the butter and sugar until light in color, fluffy and airy, about 3 minutes. Add the eggs, one at a time, mixing until fully incorporated and then add the vanilla and mix for another 3 minutes or so, until the mixture is homogeneous, and very fluffy.

Slowly add the dry ingredients and mix just until combined, and until no white streaks remain. Stir in the coffee grounds and mixed until fully distributed throughout the dough. Place the dough, in 1-inch balls, about 2-inches apart on the cookie sheets.

Bake for 12-14 minutes until lightly browned on the edges but soft in the middle. Cook for a few minutes on the cookie sheet, and then cool completely on a wire rack.
