Cilantro-Lime Dip
Well, I made it to the end of the week. This marks the end of the second week Paul has been out of town on trips with students. Last week they spent time in Southeast Missouri building homes for a family who lost theirs in floods in recent years. He spent the week with a group of 16 high schoolers and a few volunteers and they got their hands dirty in the HOT July weather. He truly loves projects like this.
He got home from that around 6:30pm Friday. He re-packed his bags, we ate some dinner and slept a few hours, only to hop out of bed at 4:30am the next morning to head to Colorado with a group of 7 freshman and 6 adult volunteers for an annual trail hike. The group is heading back today and will arrive home early Saturday morning. I am looking forward to hearing the stories and definitely looking forward to having my hubby home!
The silver lining of Paul being gone? I got to spend a lot of time in the kitchen last weekend. And one result – this Cilantro-Lime Dip! I know you know how I feel about snacks in general but this dip is a big winner! It’s actually a little summer in a bowl. A quick sour cream/mayo dip recipe with fresh cilantro, fresh lime juice and diced jalapenos. It’s a perfect blend of tangy, salty and spicy and it’s so quick and simple – a great dip to round out your summer!

It’s always a bummer when the man stacks are out of town, but spending a ton of un-interrupted time in the kitchen is definitely the silver lining. Looks like you made amazing use of your time – this sauce looks amazing! I want to dip everything in it, spread it on sandwiches…I’d probably put it on salad too! OOOH what about a tostada with the dip on top?? I’m excited!
Sometimes it is nice to have alone time, but after a few days I am ready to get back to normal and have my husband home! Glad he will be home soon. The dip looks fantastic, I love cilantro and lime together!
I could make a meal out of this…especially with pretzel chips! Those things are so crazy addictive! I’m so glad your hubby will be home soon. I become a crazy hermit when my husband’s gone…I just lock myself in the house and cook and compute in my pjs all day. It’s nice for about 24 hours, and then it becomes a problem. He’s good for me!
