Chipotle Cheddar Grilled Cheese with Andouille Sausage & Smashed Avocado

I’m sorry that it takes you a day to read the title of this sandwich but I really couldn’t leave out any of the details.

I couldn’t leave out any of the details because it’s GRILLED CHEESE MONTH.  I’m also sorry for yelling.  It’s just grilled cheese!  I love grilled cheese sandwiches in all their varieties so to kick off – and to celebrate – this month, we are snacking on some new sandwiches.  Every Tuesday this month I intend to share a new grilled cheese recipe with you and I’m pretty excited about some of the ideas I have…now to just cross my fingers and hope that they work!

You know what else I love?  Grocery stores.  I’m one of those people who actually likes to shop for groceries and you probably know that I miss my favorite – Trader Joe’s – ever since moving from KC last year.  But believe it or not, I found a (near) replacement.  If not a replacement, at least a close contender.  And that is Lucky’s Market.

I hadn’t heard of Lucky’s until recently when one of Paul’s friends (who obviously knows me fairly well) told us about this new market that, if I liked TJ’s, I would love.  So I very quickly made my way there and very quickly fell in love.  It’s huge and bright and the prices are amazing.  It has a full deli, bulk section, meat counter, fish counter, cheese counter, bakery, wine & spirits selection, and don’t get me started on the produce section.  I can’t believe I’m so excited about a grocery store.  But I am excited nonetheless.

And this new grilled cheese would not be on your screen right now if it hadn’t been for my first Lucky’s market trip.  The sourdough I used, the perfectly ripe avocado and the andouille sausage – all brought to you my by new favorite market!

So, to sum it up: April is grilled cheese month and I found a new grocery store.  I think April could be a pretty good month!

Chipotle Cheddar Grilled Cheese with Andouille Sausage & Smashed Avocado

Yield: 2 sandwiches

Total Time: 15 min

Kick off to Grilled Cheese Month - Chipotle Cheddar Grilled Cheese with spicy andouille sausage and salty smashed avocado.

Ingredients:

1 andouille sausage link, (chicken or pork) sliced
4 slices sandwich bread (sourdough or other crusty bread)
Butter, for toasting
1 avocado, smashed with a pinch of kosher salt
4 ounces chipotle cheddar cheese, coarsely shredded (I use Cabot)

Directions:

Brown the sliced sausage in a large non-stick skillet for about 5 minutes on each side. While the sausage browns, butter one side of each of the slices of bread. Once golden and fragrant, set aside.

In the same skillet used to brown the sausage, over medium heat, place two of the buttered bread slices, butter side down. Spread each with half of the avocado. Top the avocado with the browned sausage (divide evenly) and then divide the cheese between the two. Place the remaining buttered bread, buttered side up, on top of the filling.

Cook each sandwich for 5-6 minutes on each side until golden brown and the cheese inside is melted.

    I actually prefer recipe titles that take a day to read, because it means there’s THAT many good things in it!! Adouille + cheese + chipotle + all the thing = my heart.

    This is going to be a seriously delicious month, I can already tell. Grilled cheese should be at the bottom of the food pyramid. It’s a staple. I actually JUST discovered we have a Lucky’s Market here in Columbus and it is AWESOME! I spent what seemed like hours just strolling through the bulk foods staring at all the giant bins of goodness. Fist pump for Lucky’s!

    I too LOVE grocery shopping. LOVE, LOVE, LOVE! TJ is also my favorite, but I have to drive an hour away for the one nearest to me (either Madison, WI or Algonquin, IL). I recently was at the Mall of America in MN and found the BEST, biggest TJ ever! I was there for almost 2 hours! Nirvana!
