Chicken Soba Noodle Stir-Fry Recipe

If you look around in my recipe archives you are sure to notice that Asian recipes are at the top of my list of favorites.  A couple of weeks ago, we actually had astir-fry very similar to the one I’m sharing today and Paul reminded me how often we ate stir-fry when we first got married.  I didn’t remember but I am not surprised.  I love stir-fry, fried rice, cashew chicken, etc.  I even used to eat soy sauce on my scrambled eggs.  Weird?  Or brilliant?  I’m going with brilliant.

When I’m trying to keep things fairly healthy, simple and quick, stir-fry is usually where I turn.  And it was no different this time when Just BARE® Chicken asked me to create a 5-ingredient (+ chicken) recipe.  I immediately thought soy sauce, ginger and sesame oil.  Three super flavorful ingredients which are all great ingredients alone but together, they create one of my favorite flavor combinations. I added some soba noodles, a current obsession and some broccoli for some color.

Chicken Soba Noodle Stir-Fry

Yield: 4 servings

Total Time: 30 min

Quick and simple chicken & soba noodle stir-fry. Healthy and flavorful and only a handful of ingredients you probably already have in your house.


6 ounces soba noodles
2 tbs. olive oil, divided
1/2 tsp. salt
1/2 tsp. pepper
1 package Just BARE boneless, skinless chicken breasts
1/2 cup soy sauce
2 tsp. sesame oil
3 tsp. freshly grated ginger
1 pound fresh broccoli, cut into bite-sized florets (optional, additional ingredient)


Cook the soba noodles according to package directions. When finished, drain and drizzle with a little olive oil to prevent sticking.

While the noodles cook, heat a large non-stick skillet over medium heat. Let it heat up, dry, until very hot - water should sizzle on the surface when you sprinkle a few drops on.

Pat the chicken dry on both sides. Brush one side with olive oil and season with salt and pepper. When the pan is hot, add the chicken, oiled/seasoned side down. Oil and season the side that is sticking up and then don't touch the chicken while the first side browns. After about 5 minutes, check the color and if it is browned to your liking, flip gently and brown the other side. Allow the second side to cook for about 6 minutes or until the chicken is browned and cooked through. Remove from heat and set aside.

If you choose to add broccoli: In the same pan, add about 1 teaspoon of olive oil. Add the broccoli and cook for about 5 minutes or until it starts to get tender. Whisk the soy sauce, sesame oil and ginger together and add to the broccoli. Stir to combine.

If you don't add the broccoli: Dice the chicken and add it back to the skillet. Whisk the soy sauce, sesame oil and ginger together and add to the chicken. Stir to combine and then add the cooked pasta, Stir well to coat and cook until everything is heated through.
