Beer Caramelized Onion & Artichoke Dip

I have had a major kitchen facelift itch lately.  And I mean m.a.j.o.r.

When we moved into our house in January of 2013 we painted nearly every single inch of wall space.  That is, except for the walls in the kitchen.  They were very red and I didn’t hate it.  I didn’t ever love it, but I could definitely live with it.  The part I never got used to was a black and white checkered border beneath a chair rail.  And the more we have settled into the house, the vintage-diner-checkered-border-red-walled kitchen fit less and less with the direction we were heading.

So I finally charmed my handy husband into helping me tear up the kitchen over the weekend and rid our lives of the red walls.  When we moved in we painted a lot of the walls yellow (if you know me you are not surprised.)  Paul was a little afraid of so much yellow going on so he suggested that we go a little more neutral in the dining room.  And back to Lowe’s he went, and he returned with a beautiful brown color called Caramelized Onion.   He had assumed that he couldn’t go wrong with a paint named after food.  And he was SO right.  I totally and completely fell in love with the color, and subsequently, the dining room became my favorite room in the house.

And I loved the color so much that we now have caramelized onion walls in the kitchen as well and I could not be more happy with it!

We made new trim which I am so ecstatic over and we are currently painting the windows, door frames and some built-in benches.  Next up will be painting the cabinets, changing light fixtures and possibly cabinet pulls, and throwing a few things on the walls.  More to come!

But first!  To celebrate my caramelized onion walls, I am sharing a new dip recipe today with what else, but caramelized onions!  Beer caramelized onions, to be exact, mixed into a simple artichoke dip recipe.  Perfect for fall weather, football snacks, or just for enjoying in your new kitchen!

Beer Caramelized Onion & Artichoke Dip

Cheesy Beer Caramelized Onion & Artichoke Dip

Yield: 4-6 servings

Total Time: 1 hour

Cheesy artichoke dip with beer caramelized onions, cream cheese, parmesan cheese and green onions.


1 Tbs. olive oil
1 medium yellow onion, sliced into half-moons
1 medium shallot, sliced into half-moons
1/2 cup beer (I used Shiner Bock)
8 ounce cream cheese
1/4 cup plain Greek yogurt (or sour cream)
1/2 cup artichoke hearts, drained and chopped
1/2 cup freshly grated Parmesan cheese
1/4 cup green onions + more for garnish
1/2 tsp. cayenne pepper (more or less to taste)
1/2 tsp. salt


Heat the olive oil in a skillet over medium-low heat. Add the onions, shallots and a pinch of salt. Stir well. Cook over medium-low heat for 25-30 minutes until fragrant and brown. Add the beer and stir. Cover loosely with a lid and cook for another 10 minutes or so, until the liquid is absorbed.

While the onions caramelize, mix the cream cheese, Greek yogurt, artichoke hearts, Parmesan cheese and green onions, along with the crushed red pepper and salt together in a bowl. Pre-heat the oven to 375 degrees and grease a 5-inch round or similar-sized oven-safe baking dish.

When the beer is absorbed, add the onions to the cream cheese mixture and stir well to incorporate. Transfer the mixture to the prepared baking dish and bake for 15-20 minutes until the dip is bubbly and heated through.
