Cheeseburger Meatball Grilled Cheese
Here’s a confession: I’m picky about leftovers. There. It’s out and I’m no longer going to be embarrassed by the fact that sometimes I just don’t like leftovers. My husband will eat nearly anything leftover and I do admit that the older I get, the more open I am to various leftovers.
This post, however, is about foods that are amazing leftover. Foods like: meatloaf; chili (even better the second day); lasagna; black bean burgers (leftovers = quesadilla); pizza; spaghetti; and cheeseburger meatballs!
You might have guessed by now that this post is about leftover cheeseburger meatballs, in the form of a grilled cheese. You might also know that I have a thing with sandwiches, and particularly with grilled cheese sandwiches.
So it was an absolute no-brainer for me when it came to using up the leftovers of Monday’s meatballs. This grilled cheese made the most mouth-watering lunch I’ve had in a while. The meatballs were amazing by themselves but then when I smashed them between buttery bread and more cheese? Lunchtime euphoria. Seriously.

Cheeseburger Meatball Grilled Cheese
Yield: 1 sandwich
Total Time: 15 min
A round-two recipe for Cheeseburger Meatballs: Cheeseburger Meatball Grilled Cheese.
Ingredients:
1 Tbs. butter
2 slices whole wheat bread
5-6 cheeseburger meatballs, halved
2 slices of cheddar cheese
1-2 Tbs. copycat "special sauce" (recipe in the link above)Directions:
Heat a small non-stick skillet over medium heat. Butter one side of each slice of bread.
Place one slice of bread, butter side down, in the heated skillet, place a slice of cheese on top and then line with the meatballs. Place the other slice of cheese on top of the meatballs, top with the "special sauce" and then place the other slice of bread on top, butter side up.
Cook for 3-5 minutes on each side, until the bread is golden and toasty and the cheese is melted.
Oh, dear. You took those gooey things to a whole new level of awesome. You’re killing me! This is a must make. 🙂

You’re not alone – my boyfriend is exactly the same way which means all the more for me! I’m pretty sure that he would deem this an appropriate use of leftovers though, it looks amazing!

This looks amazing, Cassie! It reminds me of a cheeseburger I used to eat at Ruby’s Diner that was flattened (almost to the point of being a grilled cheese). Yum!

That looks so insanely delicious, I can’t even begin to tell you! But…I am a total fan of leftovers. I can’t bear to throw away perfectly good food. And I double alot of our meals, just so we HAVE leftovers! Such a time saver with kids and busy schedules!

My husband loves leftovers, and always eats them for lunch…I like smaller lunches and always miss out. Definitely working this into our meal plans next week!
