Brown Butter White Chocolate Pretzel Blondies

Once again, Target and their seasonal candy grabbed my attention just long enough for these cute little Easter-colored white chocolate M&M’s to end up in my cart.

Why do they have to tempt me with the adorable pastel colors and white chocolate.  In M&M candies.  Are you serious?  See, I am definitely not the world’s biggest chocolate fan.  Given the choice any time, I will choose Skittles, strawberries or avocado or French fries over chocolate.  I know, that’s a weird list.

I don’t hate chocolate, it’s just not my first choice.  Just a side note: Trader Joe’s dark chocolate is becoming another story.

White chocolate, which isn’t really chocolate, could be considered one of my favorites.  I have a weakness for this stuff and usually don’t even buy white chocolate chips unless I have a need for them.  Why?  Oh, because I eat them like CANDY.

So the candy creators at Mars, the brilliant folks that they are, made me feel normal about eating white chocolate from the bag.  They put it in M&M form.  Holy moly, the brilliance.  Why couldn’t I have thought of this?  They totally made me fall in love with M&M’s.  I just hope they don’t go away when Easter is over.  I’m going to need to make these blondies again.

Rich.  Nutty.  Chewy.  Crunchy.  Sweet.  Salty.  Dense.  Melt-in-your-mouth (like M&M’s are supposed to!)  The pretzels add the perfect balance to the sweet of the brown sugar and the white chocolate.  And the brown butter, oh, the brown butter adds the most perfect nuttiness that makes everything just a touch better.

You probably won’t be able to eat just one of these.  Not that I’m speaking from experience or anything.  Ahem.

Brown Butter White Chocolate Pretzel Blondies

Yield: 24 squares

Prep Time: 10 minutes

Cook Time: 25 minutes

The chewiest blondie recipe featuring Easter-themed white chocolate M&M's, crunchy pretzels and nutty brown butter.

Ingredients:

1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
3/4 cup butter, browned and cooled
1 1/2 cups light brown sugar, tightly packed
2 eggs
1 1/2 tsp. vanilla extract
1 heaping cup pretzels, crushed
1 heaping cup White Chocolate M&M’s (or white chocolate chips)

Directions:

Preheat oven to 350 degrees. Line a 9x13 sheet pan with aluminum foil and spray the foil with non-stick cooking spray.

In a medium bowl, whisk the flour, baking powder, and salt together. Set aside.

In a large bowl, whisk the browned butter with the brown sugar until well-blended. Add the eggs and vanilla and whisk to combine. Fold the dry ingredients into the wet using a spatula. Mix just until combined, do not overmix.

Fold in the pretzels and the white chocolate M&M’s and mix until distributed. Transfer the batter to the prepared pan and bake for 22-25 minutes. The top will be shiny and somewhat crackled. Remove and cool completely on a wire rack before cutting.

Cassie's Notes:
To crush the pretzels, I put them in a sandwich bag and broke them with my hands until they reached the consistency I was after.

I used the whole bag of M&M's, which is more than 1 cup, but I didn't want them left sitting around the house. The bars will full of them so feel free to use less.

You do not have to brown the butter for this recipe. If you would rather, just melt 12 tablespoons of butter and allow it to cool before using it.

    Hey there, I had this fantastic idea to make blondies or some kind of moist and chewy cookie bar using misty mints/pastel mints in place of chocolate chips… so you think this recipe base would work well with that?
