Balsamic Sesame Chicken Salad Wraps

I have to tell you one glorious thing about yesterday. Ok, well maybe two: I didn’t leave the house once. It snowed a blizzard. I have no idea how much snow we have because I did not stepped one foot outside. In addition, I wore my PJ’s all day. I got up, took a bath, and then put my pajamas right back on. They might have some magical powers – just because we checked some things off of our list yesterday – Paul finished painting the bathroom, it’s now clean and tidy and usable. Our walls have things hung on them and we are ready for guests. It was beyond glorious.

So who is visiting? Want to guess what I’ll feed you for lunch?

One of my favorite lunches of all-time is chicken salad. More often than not, if I see it on a menu, I will order it. I like all different versions – including different nuts, various fruits, Greek yogurt, celery, etc.

But there are two problems – they are usually full of mayonnaise and most-often served on soft and buttery croissants.

Don’t get me wrong – there is everything to love about a soft and butter croissant. Except when you are trying to be conscious about what you are feeding yourself.

But what’s a girl to do when she’s craving some chicken salad, yet doesn’t want to blow the calorie budget? She invents a new chicken salad, of course!

This one a cross between Mediterranean and Asian flavors – both top my list of favorites. I used balsamic vinaigrette, soy sauce, toasted sesame oil, garlic and honey; added in some rotisserie chicken and threw in some chow mein noodles for a little extra crunch.

This chicken salad will ensure that your jeans continue to fit you but will deliver some awesome flavors in a super fast, super simple weekday lunch! Annnd, if you are feeling up for a little splurge, go ahead and enjoy it on one of those croissants!

Balsamic Sesame Chicken Salad Wraps

Yield: 4 wraps

Total Time: 20 min

A new chicken salad recipe with balsamic vinegar, sesame seeds, honey and wrapped up in a tortilla for a quick, simple and healthy lunch.


2 cups cooked, shredded chicken
2 Tbs. balsamic vinegar
1 Tbs. soy sauce
1 tsp. sesame oil
1 tsp. toasted sesame seeds
1 clove garlic, minced
1 tsp. dried chives
1 Tbs. honey
1/4 cup chow mein noodles


Heat the balsamic vinegar, soy sauce, sesame oil and honey in a small sauce pan over medium heat until just slightly thickened, about 5 minutes.

While the above mixture heats up, mix the chicken, garlic, chives, chow mein noodles and sesame seeds in a large bowl. When the balsamic mixture is ready, pour over the chicken mixture and mix thoroughly.

Serve on toasted sandwich bread, croissants, tortillas or with crackers.
