Balsamic Roasted Strawberry Mascarpone Grilled Cheese (Giveaway!)
You know one of the first signs of spring and summer in Missouri? It’s when your ice cold drinks start sweating as if they’d just run a few miles. Seriously, it irritates me – it’s just one of those things. Which is why I’m excited, not only to share a new grilled cheese recipe (yes, I am obsessed) but to share a funky drink sweater called Freaker USA.
I learned about Freaker USA through a fun new site called Sweet Relish. Basically what they do is help connect people with cool stuff. You can discover, share and save anything cool you find anywhere on the web. Sweet Relish connected me with Freaker USA and I found out that they love grilled cheese just as much as I do. So to pair with their fun drink sweaters (which, by the way, can fit over any drink container – even a gallon of milk!) with a fun new, sweet grilled cheese recipe. They wrote me this note and I can’t get over how cool they sound!
This sandwich could be eaten as breakfast, lunch, dessert or an afternoon snack. I came home from the grocery store last weekend with a huge container of huge fresh strawberries and let me tell you they are so stinking good right now. I live for the day when fresh strawberries become affordable and sweet as candy! I started thinking along the lines of strawberries-and-cream grilled cheese and was intrigued to try roasted strawberries after I roasted grapes last year for a grilled cheese. Roasted strawberries are definitely my new favorite thing…along with my cool new drink sweater.

Balsamic Roasted Strawberry Mascarpone Grilled Cheese
Yield: 2 sandwiches

The sweet side of sandwiches - fresh strawberries roasted with balsamic vinegar and sugar, sandwiched between two buttered slices of bread with some creamy, sweet mascarpone cheese.
6 large strawberries (or 8 small ones)
2 Tbs. balsamic vinegar
2 tsp. sugar
pinch of salt
4 ounces mascarpone cheese, room temperature
4 slices bread, buttered on one side
Heat the oven to 400 degrees. Remove the hull from the strawberries, place the flat, cut edge onto a cutting board and thinly slice the berries. Place in a single layer on a 9x13 baking sheet. Drizzle on the balsamic vinegar, sugar and salt and then mix well to make sure each is evenly coated.
Roast in the 400 degree oven for 25-30 minutes until soft and fragrant.
Remove from the oven. Heat a non-stick skillet over medium-high heat. Spread the mascarpone on the un-buttered side of each slice of bread. Place one slice, butter side down/mascarpone side up, in the pan, top with half of the strawberries, and then top with a second slice of bread, butter side up/mascarpone side down. Repeat with the other sandwich.
Cook both for about 5 minutes per side until golden brown.
