Balsamic Greek Veggie Bowl
I feel so relieved that Friday is here.
After a short week last week, this week has seemed to drag on forever. I am definitely ready for somre R&R this weekend. So to kick it off, I made the most simple of simple veggie bowls.
Chipotle is one of my favorite quick meals to eat when I don’t feel like cooking. And I always choose the vegetarian burrito bowl, which is where the inspiration came for this meal. I wanted something quick, healthy and flavorful. So, using what I had on hand, I turned to some favorite Mediterranean flavors and ingredients and out came this rich bowl of vegetables that was filling and was ready in about 15 minutes flat! I think you could pour good balsamic over just about anything and I would adore it.
Now weekend, commence.
Balsamic Greek Veggie Bowl Recipe
Yield: 2 as an entree; 4 as a side
Prep Time: 15 minutes
Simple weeknight vegetable bowl with deep Greek flavors and sweet balsamic vinegar.
1 tsp. olive oil
1 garlic clove, minced
1 shallot, minced
1 tsp. dried oregano
1 tsp. fresh rosemary
1/4 tsp. cayenne pepper
1/4 cup red pepper, diced
1/2 cup fresh zucchini, half moons
1/2 cup cherry tomatoes, halved
1/2 cup baby ‘bella mushrooms, sliced
Salt and pepper to taste
1 tsp. capers
2 tbs. pine nuts
1 cup fresh spinach
2 Tbs. balsamic vinegar
2 ounces feta cheese, crumbled
Heat olive oil in a large skillet. Add garlic and shallot and cook until soft and fragrant, about 5 minutes.
Add oregano, rosemary and cayenne pepper, along with red pepper, zucchini and mushrooms. Stir well and continue to to cook until the vegetables soften. Stir in the tomatoes and season with salt and pepper. When the tomatoes begin to break down, add the capers, pine nuts and spinach. Cook for 2 minutes more and then drizzle in the balsamic vinegar. Stir well and allow to cook until the vinegar cooks down.
Sprinkle feta onto the vegetables and serve hot.
This would be fabulous with some browned chicken sausage added in. Or feel free to cut the feta cheese to make it vegan.
You can also serve with quinoa or your favorite pasta.
