Avocado Cheddar and Sun-Dried Tomato Quesadilla
A few weeks ago I shared our current favorite salad so I decided to run with a theme of quick and simple meals that we actually eat on a regular basis. So today it’s a quick and simple quesadilla with avocado, sharp white cheddar and sun-dried tomatoes.
You might remember that I’m married to the quesadilla king. Paul could live on quesadillas alone. We keep cheese and tortillas stocked at all times! However, this one was all my creation.
Since we moved, I am currently working from home on various freelance projects and since I can’t expect to be able to eat cookies and cake all day long, I came up with this quesadilla for a quick and easy lunch on Monday. And I wouldn’t be at all surprised it if ends up being my lunch again today. I absolutely love this combo of ingredients!

Avocado Cheddar and Sun-Dried Tomato Quesadilla
Yield: 1 quesadilla
Total Time: 15 min
A quick and simple lunch or snack: Avocado Cheddar and Sun-Dried Tomato Quesadilla.
Ingredients:
2 small flour tortillas
1 tsp. olive oil
2 ounces sharp white cheddar cheese, cubed
1 avocado, smashed
2 Tbs. sun-dried tomatoes
salt and pepper to tasteDirections:
Heat the oil in a small non-stick skillet over medium heat. Place one tortilla in the pan. Layer half of the cheese on top, slather on the avocado, layer the sun-dried tomatoes and then the rest of the cheese and sprinkle with salt and pepper. Top with the additional tortilla.
Cook for about 4 minutes on each side, until the tortillas are golden brown and the cheese starts to melt.
Cut and serve.

Quesadillas rock! They’re so cheesy and easy. We make ours in the panini press. Less fat and they cook up so fast. I love the addition of sun-dried tomatoes in yours. Perfection!

Used dark wheat and flax tortillas from Trader Joe’s instead of regular ones, mozzarella-like shredded vegan cheese and guacamole instead of plain avocado. Turned out delishhhhious!
