Apple & Bacon Grilled Cheese Sandwiches

Well, as most of you know, we had all of our things loaded into a truck yesterday, drove them about 180 miles, and then unloaded them into our new house. (More to come on that next week!) If you have ever done any such thing, you know that it consumes you. Literally. So I have enlisted the help of some of my friends to deliver some great food to you while I’m unpacking my life from boxes.

Laurie has been a favorite for a long time. Her mouthwatering photography will hook you instantly but her humor, genuine attitude and amazing recipes will make you stay a while. Hi all! It’s me, Laurie from Simply Scratch and I am absolutely tickled Cassie invited me over to guest post for her while she’s loading and unloading, packing and unpacking a gazillion boxes and moving into her new home. I was just in her shoes last summer and being the great friend Cassie is, she helped me out big time by guest posting for me.

And since it’s only fair to repay the favor {Cassie I still haven’t forgot about that confetti cookie pie! OMG!} I brought sandwiches. Cassie and I are like two peas in a pod when it comes to sandwiches. Gimme bacon, gimme cheese and let’s slap it on some good ol’ bakery bread, butter it up and grill it until it’s nice and crispy. Can I get an Amen?!

Apple Bacon Grilled Cheese

This sandwich came together one day while I was rummaging through my fridge. I’m a bacon fuh-reak so I always have that on hand, but then I spied the apples and some left over smoked Gruyere and this apple and bacon grilled cheese was born.

First you’ll want to slice the apple up pretty thin. I’m using a Galla apple, but any firm apple will do. Brayburn, Pink Lady or the beloved Honeycrisp… any of those would be delicious.

There aren’t too many technicalities when it comes to grilled cheese making. Except when it comes to the butter. I believe in spreading the butter, thinly {but not too thin of course} and evenly… covering every square inch of the bread, doing this will ensure even crispiness. Place the bread, butter-side down in a preheated skillet over medium heat. Sprinkle a little Gruyere down so the apples have something to stick too.

Top with the slices of apples… the sky is the limit so pile them up!

Top with the crispy bacon, some black pepper and lots of grated Gruyere.

And flip once the bottom is nice and golden.

The crispy bacon, the gooey cheese and the fresh sweet apple is almost too much to handle. But luckily I’m an expert at eating so it went down with out a hitch.

Apple & Bacon Grilled Cheese Sandwiches

Yield: 2 sandwiches

Prep Time: 8 minutes

Cook Time: 25 minutes

Sweet apple, smoked bacon and gooey cheese all smashed together between two slices of hearty bread. What more do you need?

Ingredients:

4 slices of Your Favorite Bread
4-6 slices of Slab Bacon, cooked and cut in half
1/2 Galla Apple, sliced thinly
1/2 cup Grated Smoked Gruyere Cheese
Black Pepper, to taste

Directions:

Butter your bread and preheat a skillet over medium heat.

Lay the first slice down, {butter-side touching the pan} and sprinkle a little bit of the cheese.

Layer the apples, bacon, a couple grinds of black pepper and that off with half of the grated Gruyere cheese.

Place the second slice on top of that and carefully flip when the underneath is golden and crispy.

Repeat with the second sandwich. Enjoy!

    And this looks absolutely amazing. I haven’t had a grilled cheese in years but that shot of it all assembled, without the top piece of bread on top? Oh my gosh. I need to get me some sandwich bread! Best grilled cheese ever.

    Wow. I think you might have just converted me to the world of bacon and apple grilled cheese! I’m normally a plain cheese/bread girl only, but I cannot with this sandwich. I need one right now, or ten minutes ago. They’re socially acceptable for breakfast, right?

    Not normally one to comment on recipes (usually just don’t think about giving feedback). I am making an exception on the Apple & Bacon Grilled Cheese Sandwich…. Local grocery didn’t have a decent smoked gouda, so I tried Monterey Jack. This sandwich ROCKED. I totally loved the way the flavors blended. Thanks for sharing!
