A Week in Sandwiches

This week I embarked on an  food series called sandwich week.  It was not planned which is so unlike me.  But I think it was pretty delicious.  As I explained here,  I have just had a serious thing going on with sandwiches lately and cannot get them out of my brain.

So here is a roundup of the week in sandwiches, I guarantee you, there is a sandwich for you in here somewhere.

Biscoff Banana Grilled Cheese

Smashed Chickpea & Pesto Sandwich

Asian Tuna Salad Sandwich

Prosciutto Kale & Caramelized Shallot Sandwich with Garlic-Goat Cheese Spread

Not posted during “Sandwich Week”, but droolworthy anyway:

Grilled Goat Cheese Sandwich with Honey Roasted Grapes & Walnuts

White Cheddar Grilled Cheese with Avocado & Tomato

And some outstanding sandwiches from my friends:

Avocado Strawberry + Goat Cheese Sandwich from Edible Perspective

Parmesan Crusted Pesto Grilled Cheese from Two Peas in their Pod

Tuna California Club Sandwich from Lauren’s Latest

Grilled Jarlsberg with Shaved Asparagus & Arugula Pesto from Panini Happy (You cannot go wrong with ANY sandwich from Kathy’s site!)

Have you had enough yet?

Happy Mother’s Day to all of my lovely friends who are mothers and mothers-to-be! xoxo

I loved your sandwich week series Cassie! It inspired me to make a chickpea one yesterday that was part guac, part pesto and part deli salad. Weird but delicious! :) Happy weekend!

All your sandwiches look amazing Cassie! BTW–I had to make another batch of your granola today because the first batch I made was already gone. My boys love it on yogurt!

I hope you do more sandwich weeks because all of these (and I seriously mean every single one of these) are winners! You should even think about publishing a sandwich book!

I love this. I picked up a panini press at target last week and have been eating the heck out of sandwiches. I have used it 5x in a week, twice in one day. So what I’m saying is I can relate!!

I have to check all these out. Always looking for new tuna ideas!

I love sandwiches and obviously don’t venture out to eat things like you do! I need you around next time I want a delicious and different lunch. Bookmarking these for later so I can boost my sandwich recipe collection and show the bf they don’t have to be turkey, pickles and hot sauce to taste good ;)
